No-Knead Potato Pizza

These days, no-knead recipes seem to be everywhere – and for good reason.  I’ve been experimenting with no-knead bread, and even no-knead baguettes, and I’m always amazed at how beautifully the dough turns out with so little effort.

Perhaps a French baker might object to calling this a baguette, but for those of us with busy lives, no-knead dough is a wonderful solution.  You simply mix the ingredients, let the dough rest overnight, and the next day you’re ready to bake.

This No-Knead Potato Pizza is one of my favorite easy versions.  The crust is soft and chewy inside with crisp edges, while thinly sliced potatoes, creamy cottage cheese, melted cheese, and fragrant herbs make a simple pizza that feels surprisingly special.  Best of all, there is no kneading, no complicated technique, and very little hands-on work.

Ingredients:

Ingredients For the Dough:

  • 1¾ cups bread flour or all-purpose flour
  • 1½ teaspoons active dry yeast
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup water

Ingredients For the Topping:

  • 1–2 potatoes, peeled and very thinly sliced
  • ½ cup cottage cheese
  • 1 cup shredded mixed cheese

Herb-Garlic Sauce ingredients:

  • ¼ cup olive oil
  • Mixed dried herbs, such as oregano, rosemary, basil, or parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Directions:

1. Making the Dough:

In a large bowl or a container with a lid, combine the flour, yeast, sugar, and salt.  Add the olive oil and water, then stir until everything is well combined and a soft, sticky dough forms.

Cover the container with the lid and leave it on the counter at room temperature overnight.  The slow rise gives the dough plenty of time to develop flavor and a wonderfully light texture.

2. Shaping the Dough:

The next day, the dough should look soft and airy.

Lightly flour your hands and gently transfer the dough to a lightly oiled pizza pan or baking sheet. Instead of rolling it, use your fingertips or floured hands to gently stretch the dough into your desired shape.

Cover loosely and let it rest for about 1 hour.

3. Preparing the Topping:

While the dough is resting, combine the olive oil, herbs, garlic powder, and onion powder in a small bowl.

Make sure the potatoes are sliced very thinly so they cook through and become tender in the oven.

4. Assembling the Pizza:

Preheat the oven to 400°F.

Brush or spoon some of the herb-garlic sauce over the surface of the dough.

Dollop the cottage cheese evenly over the pizza. Arrange the thinly sliced potatoes on top, keeping them in a single layer and avoiding too much overlap.

Drizzle or spoon a little more of the herb sauce over the potatoes.

5. Baking:

Bake at 400°F for about 20 minutes.

Remove the pizza from the oven and sprinkle the remaining shredded cheese evenly over the top. Return it to the oven and bake for another 10 minutes, or until the cheese is completely melted and the edges are golden and crisp.

Let the pizza rest for a few minutes before slicing.

A Little Tip:

Every oven is different, so keep an eye on the pizza during the last few minutes of baking.  If you prefer a crispier crust, let it bake a little longer; if the cheese is browning too quickly, loosely cover the top with foil.

No kneading, no complicated steps – just mix, rest, top, and bake.  Sometimes the easiest recipes really are the most satisfying!


Rice Paper Crab Omelet

Rice Paper Crab Omelet

If you’ve been looking for an easy, quick meal, this Rice Paper Crab Omelet is definitely worth trying. Rice paper has become a popular ingredient for creating all kinds of simple and creative recipes, and after trying several versions, this one quickly became one of my favorites.

It’s crispy on the outside, tender and savory on the inside, and comes together in just a few minutes.  The combination of egg, sweet crab meat, shredded carrot, and green onion makes a simple rice paper into a satisfying little meal.

One tip that makes a big difference: don’t soak the rice paper first.  Many recipes call for softening it in water, but I prefer using it straight from the package. As it cooks in the pan, it softens just enough while becoming wonderfully crisp around the edges.

Serve it with sweet-and-sour sauce or soy sauce for dipping.  For a more complete meal, enjoy it with steamed rice and your favorite steamed vegetables.

Ingredients:

  • 1 sheet rice paper (I use Three Ladies, but any brand will work)
  • 1 egg, beaten
  • 3 oz. cooked crab meat
  • 2 tablespoons shredded carrot
  • 1 green onion, thinly sliced
  • A small amount of cooking oil, for pan-frying
  • Salt and black pepper, to taste
  • Sweet-and-sour sauce or soy sauce, for serving

Directions:

1. Heating the pan:
Place a nonstick skillet over medium heat.  No need to add oil at this stage.

2. Adding the rice paper:
Add rice and steamed vegetables. It’s simple, inexpensive, and a great way to turn a few everyday ingredients into something surprisingly delicious.

 

Place one sheet of dry rice paper directly into the warm pan.  Cook for a few seconds, until it begins to soften slightly.

3. Add the egg.
Pour the beaten egg over the rice paper and quickly spread it into an even layer.

4. Add the filling.
Sprinkle the crab meat, shredded carrot, and green onion evenly over the egg. Season lightly with salt and pepper.

5. Crisp the rice paper.
Cook for about 2 minutes, or until the bottom of the rice paper turns golden and crispy.  Drizzle a small amount of oil around the edges and let it work underneath the rice paper.

6. Fold and finish cooking.
Carefully fold the rice paper in half.  Continue cooking for another minute or two, turning once if needed, until both sides are lightly golden and crispy and the egg is fully cooked.

7. Serve.
Transfer to a plate and serve hot with sweet-and-sour sauce or soy sauce for dipping.

Serving Suggestion

This crispy crab omelet makes a wonderful quick lunch or light dinner.  For a heartier meal, serve it with steamed vegetables.

Easy Apple Pie

    One of my favorite treats at McDonald’s is their little apple pie.  There is something so comforting about that flaky, golden crust wrapped around warm apples with a hint of cinnamon.

    This easy homemade version gives you that same cozy feeling without much work.  Using ready-made puff pastry makes the crust quick and effortless, while the homemade apple filling gives the pies a fresh, fragrant flavor that is hard to beat.  As the pies bake, the warm aroma of cinnamon and apples fills the kitchen and makes the whole house smell wonderful.

    You can certainly use store-bought apple pie filling to save time, but I prefer making the filling from fresh apples.  It takes only a few extra minutes and makes these little pies taste so much better.

    Ingredients:

    Apple Filling ingredients:

    • 3 cups peeled and finely diced apples (I like to use a combination of apples)
    • ¼ cup butter
    • ½ cup sugar (a combination of brown and white sugar)
    • 2 tbsp cinnamon and nutmeg, combined
    • 1 tsp vanilla extract
    • 1 tbsp lemon juice

    Ingredients for the Pastry:

    • 1 package puff pastry, thawed and brought to room temperature
    • 1 egg, beaten

    Ingredients for the Topping:

    • 2 tbsp brown sugar
    • 1 tbsp cinnamon

    Directions:

    1.  Preparing the oven:
    Preheat the oven to 400°F.  Line a baking sheet with parchment paper.

    2.  Making the apple filling:
    Peel and dice the apples into small pieces.  Place them in a saucepan over medium heat.  Add the butter, sugar, cinnamon, nutmeg, vanilla extract, and lemon juice.  Cook for about 10–12 minutes, stirring occasionally, until the apples are tender and the mixture is fragrant.  Remove from the heat and let the filling cool completely.

    3.  Preparing the cinnamon-sugar topping:
    In a small bowl, mix the brown sugar and cinnamon together.  Set aside.
     Unfold the puff pastry and cut it into 8 equal squares.  Place a spoonful of the cooled apple filling in the center of each square, leaving enough room around the edges to seal.

    4.  Sealing the pies:
    Brush the edges of each pastry square with beaten egg.  Fold the pastry over the filling to form a rectangle or triangle, depending on your preferred shape.  Press the edges together, then use a fork to crimp and seal them securely.

    5.  Adding the topping:
    Place the pies on the prepared baking sheet.  Brush the tops with the remaining egg wash, then sprinkle with the cinnamon-sugar mixture.

    6.  Baking:
    Bake for about 18–20 minutes, or until the pastry puffs and turns beautifully golden brown.

    7.  Cooling and enjoying:
    Let the pies cool for a few minutes before serving. The apple filling will be very hot straight from the oven.

    8.  A little homemade apple pie, a cup of coffee, and a quiet afternoon--sometimes that is all you need for a happy day.

Soy Sauce Chicken

Soy Sauce Chicken

Chinese cuisine is known for its incredible variety of flavorful dishes, from roast duck and roast pork to grilled and soy sauce–braised chicken.  These dishes are often served at family gatherings, celebrations, weddings, and special occasions.

Although it can be difficult to recreate the exact flavors of a Chinese restaurant at home, some dishes are surprisingly simple to make.  Soy Sauce Chicken is one of them.

Traditionally, Chinese restaurants--a seasoned braising liquid you can keep and reuse over time, becoming richer and more complex with each batch. Of course, we don't need to make a restaurant-style master sauce at home.  This recipe uses a simpler method I learned on social media and decided to try myself.  The result was delicious, easy to prepare, and flavorful enough that I wanted to share it with you.

This recipe uses chicken legs, making it perfect for a small family meal.  First, lightly brown the chicken, then gently simmer it in a savory soy sauce mixture until it is tender and beautifully glazed.

Ingredients:

Chicken ingredients:

  • 2 chicken legs, skin on
  • 1–2 teaspoons cooking oil

Soy Sauce ingredients:

  • 1 tablespoon oyster sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons chicken bouillon powder
  • 1 tablespoon brown sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon Chinese cooking wine
  • 1 cup cold water

Instructions:

1.   Browning the chicken:

2.   Rinse the chicken legs and pat them thoroughly dry with paper towels.

Heat a small amount of oil in a pan over medium heat. Place the chicken skin-side down and cook until the skin is lightly golden and nicely browned.  Turn the chicken over and brown the other side briefly.

The chicken does not need to be fully cooked at this stage.  The purpose of this step is simply to give the skin a beautiful color and add extra flavor.

Remove the chicken from the pan and set aside.

2. Preparing the sauce:

In the same pan, combine the oyster sauce, soy sauce, chicken bouillon powder, brown sugar, garlic, ginger, rose wine, and cold water.

Stir well and bring the sauce to a gentle boil.

3. Simmer the chicken

Return the browned chicken legs to the pan.

Reduce the heat to low. Using a spoon, repeatedly ladle the hot sauce over the chicken so the sauce coats the skin and gradually infuses the meat with flavor.

Cover the pan loosely if desired and let the chicken simmer gently for about 20–25 minutes, turning the chicken occasionally so both sides absorb the sauce evenly.

Avoid cooking over high heat.  Gentle simmering allows the chicken to become tender while giving the sauce time to penetrate the meat without burning the soy sauce or sugar.

4. Finishing and serving:

After the chicken is fully cooked and tender, remove it from the pan and let it rest for a few minutes before serving.

If you would like to use the remaining sauce as a dipping sauce, strain it through a fine sieve to remove the ginger and garlic.  If the sauce has become too thick, add a little water and warm it gently until it reaches the consistency you prefer.

Slice the chicken into smaller pieces and serve with the warm sauce over the top or on the side.

A Little Tip:

The key to this recipe is low and slow cooking.  Once the chicken is added to the sauce, keep the heat low and continue spooning the sauce over the chicken. This helps create a flavorful, glossy coating while keeping the meat tender and juicy.

Serve with steamed white rice and your favorite vegetables for an easy and delicious Chinese-style meal at home.

Basic No-Knead Sweet Bread

One Easy Dough, Several Delicious Ways

Making bread once intimidated me.  After using a bread machine for a while, however, I became more comfortable working with yeast and eventually started experimenting with different methods.  One of my favorites is no-knead bread because it requires very little effort but still produces soft, flavorful bread.

This basic sweet dough is especially versatile.  You can bake it as a simple loaf of sandwich bread, shape it into small dinner rolls, add dried fruit for a sweet breakfast bread, or reduce the sugar and turn it into a baguette-style loaf.  You can even add mashed potatoes to make an extra-soft potato sandwich bread.

The best part is that you can prepare the dough the night before and let it rise slowly while you sleep.  The next morning, simply shape it, let it rise again, and bake.

Ingredients:

  • 2 cups bread flour
  • 1 teaspoon active dry yeast
  • 1 large egg
  • 1 cup milk, lukewarm
  • 2 tablespoons vegetable oil or neutral-flavored oil
  • ½ teaspoon salt
  • ¼ cup sugar
  • ¼ cup butter, softened and cut into small pieces
  • Optional:  ½ cup dried fruit, such as raisins, cranberries, or chopped apricots
  • Optional:  ½ cup leftover mashed potatoes for potato sandwich bread

Directions:

1. Making the Dough

In a large bowl, combine the flour, yeast, egg, milk, oil, salt, and sugar.  Mix well with a wooden spoon or spatula until everything is incorporated and you have a soft, sticky dough.  There is no need to knead.

Cover the bowl tightly with plastic wrap or a lid and let the dough rise at room temperature overnight, about 8–12 hours.  The dough should grow noticeably and become bubbly.

2. Shaping the Bread

The next morning, gently stir or fold the dough a few times to release some of the air.  Choose one of the following methods.

For a Basic Sandwich Loaf

Grease a small loaf pan.  Shape the dough into a rough log and place it in the pan.  Add soft butter over the dough.

Cover and let it rise at room temperature for about 1½–2 hours, or until the dough looks puffy and has risen close to the top of the pan.

Bake in a preheated 350°F oven for 20–25 minutes, or until golden brown.  Let it cool before slicing.

For Sweet Breakfast Bread

Add ½ cup of d6666666ried fruit to the dough after the overnight rise.  Raisins, dried cranberries, chopped dates, or dried apricots all work well.

Shape the dough into a round loaf or place it in a loaf pan.  Let it rise for about 61½–2 hours.

Bake at 350°F for 20–25 minutes, until golden brown.

For an extra-special finish, brush the warm bread with a little melted butter or honey after baking.

For Dinner Rolls

Divide the dough into 8–10 equal pieces.  Gently shape each piece into a ball and place them in a greased baking pan, leaving a little space between them.

Cover and let them rise for about 1–1½ hours, until puffy.

Bake at 350°F for 15–20 minutes, until lightly golden. Brush with melted butter while they are still warm.

For a Croissant-Style Bread

This dough can be used for a simple homemade croissant-style pastry, although it will not have the same flaky layers as a traditional laminated French croissant.

After the overnight rise, place the dough on a lightly floured surface and gently roll it into a circle.  Cut the circle into 6–8 triangles.

Starting from the wide end, roll each triangle toward the point to form a crescent shape.  Place on a parchment-lined baking sheet and let rise for about 1½–2 hours.

For a golden finish, brush the tops with a little beaten egg.

Bake at 350°F for 15–20 minutes, or until golden brown.

For a Baguette-Style Loaf

For a less-sweet bread, reduce the sugar to 1–2 tablespoons.

After the overnight rise, divide the dough into two pieces.  Gently stretch each piece into a long, narrow loaf and place on a parchment-lined baking sheet.

Cover and let rise for about 1–1½ hours.

Just before baking, make a few shallow diagonal cuts across the top with a sharp knife.

Bake at 400°F for about 20–25 minutes, until the loaves are golden brown and sound hollow when tapped.

Optional: Potato Sandwich Bread

For an e3specially soft loaf, add ½ cup of leftover mashed potatoes to the dough.  Because potatoes add moisture, you may need to add a tablespoon or two of flour if the dough seems unusually wet.

Shape the dough into a loaf and place it in a greased loaf pan.  Let it rise until puffy, then bake at 350°F for about 25–30 minutes, or until golden brown.

Tips for Success

  • The dough should be soft and sticky, not stiff. Resist the temptation to add too much flour.
  • If your kitchen is cool, the overnight rise may take longer.
  • For a sweeter bread, keep the full ¼ cup of sugar. For baguette-style bread, reduce the sugar.
  • Dried fruit can be added after the first rise so it doesn't interfere with the dough's development.
  • Let the bread cool before slicing.  This allows the inside to finish setting and gives you cleaner slices.
  • Because this is a simple no-knead dough, don't worry about making it perfect.  This recipe's beauty   is its flexibility.
