Chicken Stirfry with Herbs

I created this recipe similar to Thai Chicken with basil, which is very familiar to many people. A new study has shown that cilantro is the herb that can lower cholesterol if consumed daily. Therefore, instead of using just basil, I add cilantro to make this dish. Both of these herbs pair well together. The lime juice adds a citrus flavor. Serving this dish with steamed white rice is an excellent choice for dinner.

 Ingredients:
1 large boneless chicken breast (about 10 oz.)
1 cup fresh basil
1 cup fresh cilantro
2 garlic cloves
1 shallot
2 tsp fish sauce
2 tsp soy sauce
2 tsp oyster sauce
2 tsp sugar
1/8 tsp black pepper
Juice of one lime
1/2 to 1 jalapeño (your taste of spiciness)
1/2 cup chopped white onion
Adjust the seasoning with some salt, if needed ,Oil for stir frying – about 1 tbs
Serve with rice

Directions:
Place both herbs, garlic, shallot, and chopped jalapeño in mini food processor and pulse a few times or until finely chopped.



Scrape down sides of bowl as needed. Remove most of the herbs mixture and place in a bowl, but leave about 1/4 cup of mixture. Add chicken breast and pulse a few times until chicken is coarsely chopped.

Remove chicken and place in a bowl.
Distribute half of the seasoning each to the chicken and to the herbs mixture. Let marinate the chicken from 30 minutes to one hour.

Add the lime juice to the herbs mixture and mix well.
In a wok, heat oil until hot. Stir in chicken and white onions. Stir chicken and break up chicken with a wooden spoon until almost cooked with a few traces of pink remaining.
 

Add the herbs mixture and cook, stirring constantly, until chicken is no longer pink (about 1 to 2 minutes).



Serve with rice immediately.

 

Heaven on Earth

Given the opportunity, I will take you to a place where you do get a lot of peace and happiness. If you reach that place, then you will not need to do anything. We just roam alone. In the morning, I take you to visit the apple orchard. Enjoy the apple blossoms, and apples are figurative. All the birds are singing and will hear us singing during the outing. And sometimes the breeze will carry the fragrance of apples to us. Have you ever smelled the scent of apple blossoms yet?  It is very sweet scented. Were I to tell you, people often call that place, paradise. Eden means heaven on earth.

Where we live is a paradise. We do not need to go far off in search of paradise. The more you do not need to wait to die to get to heaven. Previously, I thought sure because heaven is so far away, we need to take a special spacecraft. The velocity of the spacecraft must be many times faster than the speed of light. We arrive in paradise while we still live in this life, and today my beliefs on heaven is different from then .

With me now is the paradise of Eden, where we have the moon and stars. We have sunrise, sunset, and all the birds singing, etc. And the way to paradise is also very easy. I do not need the modern airship. Eden is by us under our feet. My exposure to paradise is through my every breath.

Listen to me talk about Eden whether or not you like it, right? But the first condition for you to be in paradise is that you have time. Many people still live in paradise, but because there is no time, they should not realize. Time is your ticket to go to the door of paradise. When you enter the Eden, you just roam leisurely and have no problems.

Stir-Fried Rice Noodles with Salmon and Vegetables

I could name this dish, Pad Thai, because it has a similar sauce used to create Pad Thai. However, Pad Thai dishes are made from meats to seafood but none of them use fish. I use salmon with this recipe. Tuna or any kind of firm fish should turn out perfect.

Ingredients:
One 10 oz salmon fillet, cut into bite-size chunks
4 to 6 oz fresh rice noodles

2 tbs coconut oil or peanut oil
1 shallot, minced
1 garlic clove, minced
1 egg, lightly beaten
1 cup bean sprouts
1/2cup white onion, sliced
1/2 cup  red bell pepper julienned
about two hand full
1 jalapeno, sliced
 Sauce ingredients:
1/4 cup tamarind juice*
1/4 cup water
1 tsp ketchup
1 tsp honey
1 tsp sugar
2 tsp rice vinegar or lime juice
2 tsp fish sauce
1 tsp soy sauce
1/8 tsp cayenne
Garnish with chopped, Chives, cilantro  and roasted peanuts

Directions:
In a bowl, place salmon and add about 1 tbp of sauce . Mix well.

Whisk all the sauce ingredients and set aside.

Soak rice noodles in water for about 3 minutes and drain just before being ready to cook. If using dry noodles, then soak for 30 minutes or until soft and pliable.

Heat 1 tsp oil in a wok over medium heat until just smoking. Add fish in a single layer and cook. Do not disturb until beginning to brown on all sides. Remove from wok.
 
 

Add the remaining oil and stir in shallot, white onion, garlic, and hot  jalapeno. Sprinkle with a pinch of salt, stirring constantly, until shallot and onion are a light golden brown or their fragrance fills the kitchen.

 Stir in egg as if making scrambled eggs and move off to the side of wok (about 10 to 15 second).


Add noodles and sauce. Increase heat and toss until noodles are well coded.

Stir in bean sprouts, bell pepper and  spinach. Gently add fish back to wok and toss to combine.



If noodles look dry, add a few spoons of water. Add chives. Mix well. Place on a serving plate and sprinkle with cilantro,  and roasted peanuts.
 
*To make tamarind juice:
Place about 4 oz. tamarind pulp in 2 cups of hot water until soft. Drain and place the sauce in a glass jar, which can be kept in the refrigerator for weeks.

9. Stupid women do not leave stupid men a half step behind.
* Smart Women understand when to keep men close or at a distance.
10. Stupid women only know how to wash and cook, but forget how to take care of their beauty.
* Smart Women know to wash and cook, but also to care of their beauty.

In summary, intelligent women just use their wits to be able to "acquire the world" without a bit of effort.

Heuristics Life


Age does not matter if you have a youthful spirit, in which you can show to everyone your smile, your kindness, and the sharing of your inner life. Always think about the art of living and dying with a youthful feeling, and it can last as long as possible by nourishing your soul with a serene mood. Willingly give human love and peace, keep a playful expression, be awarded peace anywhere, and always smile, even when experiencing difficult obstacles. You have the ability to do good is often the only with people who place to do charities good. A smile reflects inner peace. Never doubt that you have to do good, to keep a calm attitude, and the charities must always do. Your face is the mirror that reflects the soul. Life is just one road in which you may encounter many obstacles, and suffering. Just do not forget that suffering purifies value, improves empathy, and helps us prepare to receive happiness in a better way. No black darkness of night nor the dazzling beauty of the day is too extreme. Likewise, without suffering, maybe we do not perceive what serenity is. Do not be afraid to cry at times of suffering. Tears are the way to express emotions and is a great way to return love to people. Tears exchanged for words express sentiments lurking in the mind that the tongue does not have the ability to express. Keep in mind that there will come a day when we have to answer to God about what we are collecting all our lives – not a record of your possessions, but as the earthly life you have lived, as well as the blessings that you enjoy. Therefore, heed the life of the soul, i.e. eternal life, which is of paramount importance. Think about this statement: there will be a day when you have to go on the other side, but you do not know when that day comes. Then you can and will not bring what you have, but just bring what you have done. Life is short, so cherish the intrigues, the gossip, and the worst outcomes that squander precious time. When you say and do bad things, then your soul shall suffer the consequences before others are damaged. Do not forget this statement: he who does a bad thing to others will have it come back to stab his own back. Always be ready to help others, regardless of anyone’s character. If you only help those who have good feelings for you, or those who seem good to you, it is not beyond the normal world. Then you are the same as anyone else. In contrast, when trying to be kind to people who did not treat you well is worthwhile. It's a challenge, and because doing so, your inner life is promoted. Be patient with people who come to you. They knock on your door because they need you and believe that you are willing to help them. When you ever feel depressed when the knock on the door occurs without responding, just think of people who are looking for you and are experiencing sadness, are injured, are suffering and depressed. Please reach out to welcome them. It is a nice gesture to help those suffering from frustration and give them a new confidence because of your presence. So when in contact with others and you donate feelings of love that is true, you are close to nirvana. The benefits of your value are sacred, but you have no right to prejudge the interests of others. You can sort, whether of material wealth, the social conditions that the situation and position have for you. But do not belittle or insult the truth. On the contrary, you have to respect. The benefits of your life is like your life, and you can decide. But remember that the person next to you has interests as you. Learn to respect. The rights of the other start from the end of your rights. When contemplating the morning, try out a good program that works best for the whole day – not only think, but especially perform. This meditation will help you prepare to receive the events of everyday life. Find out what can help you live that day the most usefully. Think of duty. Remember that you are free, and you have to assume others’ responsibilities. There are people who create many programs out and then do nothing. Your program must be your life. I wish everyone sincerely discovers what is really good. But there are many angles in a single truth. You keep looking at the glistening diamonds in a jewelry store. Each side seems to have its own light. You know there are many excellent lights, but light is just one. Likewise, only a single truth is the path of liberation from suffering in this world.

Ultimate Banana-Coconut Bread

Banana bread is one of the quick breads that I love to make.  I call this ultimate banana bread because I finally found this recipe from the cookbook entitled "How to Cook Everything" from Mark Bittman. In the recipe from the book, I add coconut oil to replace some of butter and add cinnamon to it.  I also cut back the sugar content in his recipe just for my own taste. The bread turns out delicious after baking and even better for the next day for making toast.

Ingredients:
Dry ingredients:
1 ½ cups all-purpose flour
1/2 cup whole wheat flour
1 tsp salt
1 ½ tsp baking powder
1 tsp ground cinnamon
Wet ingredients:
2 eggs
1/4 cup softened butter
1/4 cup coconut oil plus 1 tbs for greasing the loaf pan
1/2 cup sugar
3 very ripe bananas, mashed with fork until smooth
Other ingredients:
1/2 cup total chopped walnuts and pecan
1/2 cup shredded coconut

Directions:
Preheat oven to 350°. Grease 9” x 5” loaf pan with coconut oil.
Mix together the dry ingredients and set aside.
Cream the butter, oil, and sugar with a handheld electric mixer.

 Beat in eggs and mashed bananas.


Stir in dry ingredients and mix with a few pulses.

Do not overmix the batter. Stir in vanilla, chopped nuts, and coconut.


Pour the batter into the greased loaf pan and bake for 45 to 50 minutes until nicely brown.

 Check that a toothpick inserted into the center comes out clean.

This bread is very moist more than most kinds of quick bread because of the bananas. Cool on the rack for 15 minutes before serving.

Semi-Homemade Bulgogi Sauce

This simple easy sauce will save time from stir-fry or marinade meats or seafood

Ingredients:
1 cup good soy sauce
1/4 cup dry sherry or sake
1/4 cup total (4 tbs) honey and sugar – mixture ratio is your choice
3 tbs garlic-ginger paste
1 tsp pepper flakes
1/4 tsp black pepper
1/4 cup peanut oil
2 tbs sesame seeds oil
2 cups store-bought bulgogi sauce

Directions:
Mix all the ingredients together and store in a glass jar with lid. Refrigerate for months.

When ready to use, for every cup of BBQ sauce, add 1 tsp roasted sesame seeds, 1/4 cup chopped white onions, and 1 chopped green onion. Pour sauce over meat or fish.
