Ingredients:
Two 8 oz tuna fillets
2 tbs frozen orange juice
1 tbs lemon juice
1 tsp lemon zest
1 tsp orange zest
1 tsp fresh oregano or 1/2 tsp dried
1 tsp fresh basil or 1/2 tsp dried
1/2 tsp cayenne
1/2 tsp paprika
2 tbs olive oil
1/2 tsp salt
1/4 tsp black pepper
Garnish with chopped green onions
Directions;
Place fish in shallow non-metal dish.
In a medium bowl, whisk frozen orange juice, lemon juice, and the rest of the ingredients until well mixed. Pour this mixture onto the fish. Cover fish and marinate in refrigerator for an hour.
Preheat the broiler for broiling the fish or preheat the oven for baking fish.
I use a cast iron skillet or non stick sauté pan to grill the fish because I find this is an easier way to finish and to clean up too.
Heat 1 teaspoon of oil until hot. Carefully place fish onto the sauté pan. Turn heat to medium and cook for 3 minutes on each side of fish. Remove fish and place fish on a serving plate. In the same pan, add the reserve marinade and cook for a few minutes or until the sauce is reduced in half. Pour sauce over fish and garnish with green onions.
