Ingredients:

1 cup olive oil

1 cup soy sauce

1/2 cup mirin

1/2 cup red wine vinegar

1 cup red wine

2 tbsp black pepper

1 cup combination of herbs: rosemary, sage, oregano, basil, parsley, thyme finely chopped

4 garlic cloves, minced

1 shallot, minced

Directions:

Mix all the ingredients in a jar, give it a good shake, and it's ready to use.

You can use 1/4 cup of this marinade for 2-6 oz. of fish fillets. 

For vegans, instead of salmon, slice 8 oz. tofu into 4 pieces.

You can grill in a pan or bake in a countertop oven.
