Almond Coconut Raisin Cookies

Coconut oil has gained popularity for its versatile uses, from cooking to beauty routines. While it offers many benefits, we'll focus on its role in this delicious and healthy cookie recipe. These Almond Coconut Raisin Cookies combine the goodness of almond flour and coconut flour for a nutritious snack that's perfect for any time of day.

Ingredients:

  • 1 cup almond flour
  • 1 cup self-rising flour
  • 1/2 cup coconut flour
  • 2 oz. raisins
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup melted coconut oil
  • 1 egg

Directions:

1.    Preheat your oven to 350°F (175°C).

2.    Line a baking sheet with parchment paper.

3.    In a large mixing bowl, combine all the ingredients and mix until well incorporated.

4.    Roll the dough to about 1-inch thickness. Cut into shapes or form into balls and place them 2 inches apart on the prepared baking sheet.

5.    Bake for 12 to 15 minutes, or until the cookies are golden brown.

6.    Transfer the cookies to a wire rack to cool before enjoying.
