1/3 cup milk

1/2 cup sugar

1/3 cup brown sugar

1 tbsp cocoa powder

1/2 cup chocolate chips

1 tsp vanilla

Other necessities:

baking pan

8 mini muffin liners

Directions:

Preheat oven to 350 degrees.

Line the baking pan with muffin liners and set aside.

Combine the egg, sugars, vanilla, cocoa powder, milk, and oil in a mixing bowl.  Use a handheld beater to beat well.  Add the flour, mix well, and then stir in the chocolate chips.

Spoon the batter into the muffin liners to 3/4 full.  Depending on your oven temperature, bake in the preheated oven for 25 to 30 minutes.

Remove from the oven and let it cool for 10 minutes.

Turn it out onto a wire rack and let it cool completely.

Tips:

Healthier Double Chocolate Muffins

  • Flour Swap: Use whole wheat flour or oat flour instead of self-rising flour for added fiber.
  • Sweetener Alternative: Replace white and brown sugar with honeymaple syrup, or a zero-calorie natural sweetener.
  • Healthy Fats: Swap oil for Greek yogurt, coconut oil, or mashed avocado to keep them moist while reducing fat.
  • Milk Choice: Use almond milk or low-fat milk for a lighter option.
  • Boost Protein: Add a scoop of chocolate protein powder to make them fuller.
  • Chocolate Chips: Opt for dark chocolate chips or cacao nibs for a healthier chocolate fix.
