Zucchini Egg Cheese Cake

Whether you're after a light lunch, a savory side, or a new way to enjoy summer squash, this Zucchini Egg Cheese Cake is easy, wholesome, and packed with character.

 

Ingredients:

  • 1 small zucchini, washed and shredded
  • 2 eggs
  • 1 cup shredded cheese (any kind you like)
  • Salt, black pepper, cumin, garlic powder, onion powder, paprika (to taste)
  • Chopped fresh parsley
  • Cooking oil (for pan-frying)

Directions:

1.    In a mixing bowl, beat the eggs until well combined.  Add shredded zucchini and your seasonings.  Mix until well combined.

2.    Stir in the cheese and chopped parsley. Mix Thoroughly.

3.    Heat a small amount of oil in a nonstick skillet over low to medium heat.

4.    Spoon the mixture into the pan and spread gently.  Cook until golden brown on one side, then flip and cook the other side.

5.    Serve warm with bread or cooked rice.

 

Tips for making sauce to go with this recipe:

1. Garlic Yogurt Sauce (Refreshing & Tangy)

Ingredients:

  • 1/2 cup plain Greek yogurt
  • 1 small garlic clove, minced or grated
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Optional: chopped dill or mint

Directions:

Mix all ingredients in a bowl until smooth.  Chill for 10–15 minutes before serving for the flavors to blend.

 

2. Spicy Mayo (Creamy with a Kick)

Ingredients:

  • 1/4 cup mayonnaise
  • 1 tbsp sriracha or hot sauce (adjust to taste)
  • 1 tsp lime juice or rice vinegar
  • Optional: a pinch of paprika or garlic powder

Directions:

Stir together until well combined.  Add more sriracha if you prefer a spicier flavor.

 

3. Herbed Lemon Vinaigrette (Light & Zesty)

Ingredients:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp honey or maple syrup
  • Salt, pepper, and finely chopped parsley or chives

Directions:

Whisk together until emulsified.  Drizzle over or serve on the side.
