King oyster
mushrooms are a favorite vegetarian ingredient thanks to their thick stems,
firm texture, and naturally savory flavor.
They make an excellent meat because they absorb seasonings beautifully
while staying tender and satisfying. This
recipe combines king oyster mushrooms with garlic, ginger, shallots, miso, soy
sauce, and a touch of chili paste to create a rich, savory braising sauce. Coconut water adds subtle sweetness, while
black pepper and a little lime juice add warmth and brightness.
Easy to
prepare and full of flavor, these braised king oyster mushrooms make a
delicious main dish served with steamed rice or a tasty addition to any
vegetarian meal.
Ingredients:
4 king
oyster mushrooms
2 large
garlic cloves, minced
1-inch piece
of fresh ginger, finely grated
1 shallot,
finely chopped
1/4 cup
neutral cooking oil
Ingredients For the Braising Sauce:
1/2 teaspoon
gochujang or another chili paste
1 teaspoon
miso paste
2
tablespoons soy sauce
1 teaspoon white
sugar
1/2 teaspoon
salt, or to taste
1/2 cup
coconut water
1 teaspoon
freshly ground black pepper
1/4 teaspoon
lime juice
Directions:
1. Preparing the mushrooms:
Clean the
king oyster mushrooms with a damp paper towel and trim off the ends. Cut them into bite-sized pieces, approximately
2 inches long and 1/2 inch thick.
2. Preparing the braising sauce:
In a small
bowl, combine the gochujang, miso paste, soy sauce, sugar, salt, coconut water,
black pepper, and lime juice. Stir until
the miso dissolves and the ingredients are fully combined. Set aside.
3. Sauteing the the aromatics:
Heat the
cooking oil in a covered saucepan or deep skillet over medium heat. Add the garlic, ginger, and shallot, and sauté
for 1–2 minutes until fragrant. Stir
frequently to prevent the garlic from burning.
4. Cooking the mushrooms:
Add the king
oyster mushrooms and toss well to coat them with the aromatic oil. Sauté for 3–5 minutes, stirring occasionally,
until the mushrooms begin to soften and develop a light golden color.
5. Braising the mushrooms:
Pour the
prepared sauce into the pan and stir to coat the mushrooms evenly. Bring the liquid to a gentle boil, then reduce
the heat to low. Cover and simmer for
about 10 minutes, stirring occasionally, until the mushrooms are tender and
have absorbed the savory flavors of the sauce.
6. Reducing the sauce:
Remove the
lid and continue cooking for a few more minutes, allowing the sauce to reduce
and thicken. Taste and adjust the seasoning as needed. Add more black pepper for extra warmth, a
little soy sauce for saltiness, or a squeeze of lime juice for brightness.
7. Serving:
Transfer the
braised mushrooms to a serving dish and spoon the remaining sauce over the top.
Serve hot with steamed white rice, brown
rice, or your favorite vegetarian side dishes.
Cooking Tips:
For a
meatier texture: Slice the mushrooms lengthwise or cut them into thick pieces
so they stay firm and satisfying during cooking.
For deeper
flavor: Brown the mushrooms lightly before adding the braising sauce.
Adjust the
spice level: Use less chili paste for a milder dish, or add more black pepper
for a spicier flavor.
Check the
saltiness: Miso and soy sauce already contain salt, so taste the sauce before
adding the full amount of salt will.
Make it
vegan: Choose a plant-based miso and chili paste, and check that your gochujang
contains no animal-derived ingredients.
Enjoy these
savory, peppery king oyster mushrooms as an easy and flavorful addition to your
vegetarian meal!
