Baked Tilapia Fillet with Nut Butter

I have an old book entitled “The Yeast Connection", which demonstrates how to use nuts as a substitute in recipes for the excessive fat in heavy cream or butter. Nut milk can be made from nuts to poach fish or making cakes. Soon I will make nut milk for some cake recipes, but today I bake fish using nut butter. I will use very few ingredients for this dish because nut butter is quite flavorful all by itself.

Ingredients:
Two 6 oz Tilapia fillets
1 tsp garlic powder
1/4 tsp cayenne pepper
1 tsp dried onions
1/2 cup white onions, thinly sliced
1 tsp salt and pepper
Nut Butter:
1/4 cup almonds and pecans or your choice of nuts
2 tbs olive oil
Directions:
In a small bowl, combine garlic powder, onion powder, cayenne pepper, salt, and pepper and mix well.

Rub this spice mixture onto fish and place them into a baking dish.

Using a Vitamix or other blender, blend the nuts and olive oil until becoming a smooth paste. Smooth the nut butter on top of each fish fillet.

 Place the white onions over the fish.

Preheat oven to 400° and bake fish for 15 minutes.
