previously shared several easy and budget-friendly recipes using pre-roasted
chicken from Costco or Sam’s Club. If
you don’t use the whole chicken at once – especially if you live alone or with
just one other person – you can remove the meat right away and freeze it in
small portions for later use.
The leftover
bones are perfect for making a flavorful broth for soups or other dishes,
helping you reduce waste and save money.
Today, I’d
like to share a quick, convenient lunch recipe using this ready-to-use roasted
chicken. Sometimes the best meals come from using what we already have in
the kitchen. With a little planning, one
roasted chicken can easily become several easy and economical meals throughout
the week.
Ingredients:
1 cup
chopped roasted chicken
2
store-bought pita breads, halved
1/4 cup
sliced roasted almonds
1/4 cup
matchstick carrots
1 green
onion, chopped
1/4 tsp
garlic powder
1/4 tsp salt
Black
pepper, to taste
2 tbsp
mayonnaise
2 tbsp
nonfat yogurt
1 tsp
Worcestershire sauce
2 lettuce
leaves
Directions:
In a mixing
bowl, combine the chopped chicken, almonds, carrots, green onion, garlic
powder, salt, pepper, mayonnaise, yogurt, and Worcestershire sauce.
Mix well
until all ingredients are evenly coated.
Divide the
filling into two equal portions.
Place one
lettuce leaf inside each pita half, then fill with the chicken mixture.
Your chicken
pitas are ready to enjoy—a quick, satisfying, and economical lunch!
