thighs, skin-on and bone-in

onion, cut into wedges
5 garlic
cloves, smashed
2 bay leaves

1/4 cup
vinegar

1/4 cup
water
2 scallions,
thinly sliced (for garnish)
🍳 Directions:
1. Seasoning
the Chicken:
Wash and pat
the chicken thighs dry. Season
generously with salt and pepper.
2. Preparing
the Marinade,
In a bowl,
mix together the soy sauce, sugar, and vinegar.
Pour the
sauce over the chicken and add the smashed garlic.
Marinate for
1 hour for deeper flavor.
3. Browning the
Chicken:
Set the
Instant Pot to High Sauté and add the vegetable oil.
When the oil
is shimmering, add the chicken thighs and brown for 3 minutes per side.
Remove the
chicken and place the onion wedges at the bottom of the pot.
4. Pressure
cooking:
Add the bay
leaves and 1/4 cup water.
Cancel sauté
mode, close the lid, and set to Pressure Cook for 3 minutes.
Release
pressure carefully when done.
5. Reducing the
Sauce:
Switch the
Instant Pot to Simmer and cook until the sauce thickens to your liking.

Top with
sliced scallions and serve on hot steamed white rice.
