Apple Muffins

Ingredients:
1 cup muffin mix
1 egg
1 Granny Smith apple, cored and shredded
1 tsp wheat grass powder
1 tsp ground cinnamon
1/4 tsp nutmeg
1 tsp vanilla
2 tbs butter, softened
1/3 cup milk
2 tbs chia seed gel
2 tbs sugar
1/4 cup chopped walnuts

Directions:
Preheat oven to 350°. Line 7 medium muffin tins with muffin liners.
In a food processor, shred the apple using the fine-shred disc.
Combine the dry ingredient in a bowl and set aside.
In another mixing bowl using a handheld mixer, whisk the egg, sugar and butter until combined. Add milk and stir in the dry ingredients. Whisk this mixture for a few seconds. Add shredded apple and chopped nuts. Stir to combine. Scoop the batter into the muffin tin liners (2/3 full) and bake in the preheated oven for 25 minutes .
