Quick Donut Hole Pancake Mix Recipe

Craving that sweet donut shop magic, but don’t have time to make the trip?  These quick donut holes are your homemade shortcut—simple, satisfying, and whipped up in minutes with pantry staples. Whether you're watching your sugar intake or want a lighter treat, this easy recipe allows you to adjust the ingredients to suit your taste.  Made in a baby cake pop machine (or fried, if you prefer), each little bite is a warm, fluffy comfort that you can feel good about.

Ingredients:

  • 1 cup buttermilk pancake mix
  • 1 egg
  • 1/3 cup milk
  • 1/2 tsp vanilla extract
  • 2 tbsp sugar

Directions:

1.    In a mixing bowl, whisk together the pancake mix, egg, milk, vanilla, and sugar until the mixture is smooth.  The batter should have a consistency similar to that of cake batter—not too thick or too runny.

2.    If using a cake pop or donut hole maker:

·         Preheat the machine and lightly spray it with oil.

·         Use a small ice cream scoop to portion the batter into the molds.

·         Close the lid and cook until the indicator light turns off, indicating they’re done.

·         Repeat until all the batter is used.

3.    If frying:

·         Heat oil in a pan over medium heat.

·         Carefully drop spoonfuls of batter into the oil and fry until golden brown on all sides.

·         Remove and drain on paper towels.

 

Simple Chocolate Glaze (Optional)

Ingredients:

  • 1/2 cup semisweet chocolate chips (or chopped chocolate)
  • 2 tbsp milk or heavy cream
  • 1 tbsp butter (adds shine and richness)
  • Optional: 1/2 tsp vanilla extract or a pinch of salt

Directions:

1.    Melting the chocolate:

·         In a heatproof bowl, combine chocolate, milk, and butter.

·         Microwave in 20-second intervals, stirring between each interval, until smooth and glossy.

·         (Alternatively, melt using a double boiler.)

2.    Enhancing the flavor:

·         Stir in vanilla or a pinch of salt for extra depth (optional).

3.    Glazing the donut holes:

·         Let the donut holes cool slightly.

·         Dip them fully or just the tops into the glaze.

·         For a drizzled effect, spoon the glaze over each one.

·         Place on a cooling rack and let the glaze set for 15–20 minutes.
