Quick and Easy Blueberry Muffins

 

Over the years, I've shared numerous muffin recipes, but many of them involve making the batter from scratch, which can be time-consuming. In America, sweets are a staple for desserts, snacks, or breakfast, adding a delightful touch to any meal. However, in our fast-paced society, busy moms and college students often don't have the time to make muffins from scratch. That's why I'm excited to introduce this new Blueberry Muffin recipe using self-rising flour. This simplified recipe uses self-rising flour to cut down on preparation time while still delivering moist and delicious muffins. You can even substitute your favorite berries for a personal touch!

Ingredients

Dry Ingredients:

  • 1 cup self-rising flour
  • 1 cup frozen blueberries

Wet Ingredients:

  • 1 egg
  • 1/3 cup oil
  • 1/3 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract

Equipment:

  • Muffin tin (line with 6 small or 4 medium paper liners)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare Dry Ingredients: In a mixing bowl, combine the self-rising flour and frozen blueberries.
  3. Blend Wet Ingredients: In a blender, mix the egg, oil, milk, sugar, and vanilla extract until smooth.
  4. Combine Wet and Dry Ingredients: Gradually pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined; avoid overmixing.
  5. Fill the Muffin Tin: Scoop the batter into the prepared muffin liners, filling them about 2/3 full.
  6. Bake: Place the muffin tin in the oven and bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool and Serve: Let the muffins cool slightly before removing them from the tin. Serve warm or at room temperature.

Basic Sweet Dough Recipe

Making sweet bread dough at home can be challenging, but it’s worth the effort because this versatile dough can be used for recipes like doughnuts, croissants, dinner rolls, and cinnamon rolls. After years of refining, I’m excited to share this simple and reliable recipe.  You can prepare it using a bread machine, a stand mixer, or by hand in just a few minutes.

 

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup sugar (adjust to taste)
  • 1 tsp instant yeast
  • 1 tsp salt
  • 3 tbsp softened butter
  • 1/2 cup milk
  • 1 egg

Directions:

Using a Bread Machine

1.    Place all ingredients into the bread machine in the order recommended by the manufacturer.

2.    Select the "Dough" function and let the machine knead and rise the dough for you.

3.    Once ready, shape and use the dough as desired.

Using a Stand Mixer (KitchenAid)

1.    Add all ingredients to the bowl of the mixer.

2.    Attach the dough hook and mix on medium speed for 10 minutes until the dough is smooth and elastic.

3.    Cover the bowl and let the dough rise until it doubles in size before using.

Kneading by Hand

1.    Combine all ingredients in a mixing bowl and mix until the dough starts to come together.

2.    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

3.    Place the dough in a greased bowl, cover, and let it rise until doubled in size.

Banana Brownies Steamed Cake

Steamed cakes are made with simple ingredients: flour or cake flour, milk, egg, sugar, and oil or butter.  This easy cake is very popular in Japan, possibly because kitchens there are often small and not equipped with ovens like those in the West.  This method of baking is straightforward and quick, making it ideal for preparing cakes or even bread.

Today, I'm sharing a banana brownie cake recipe that uses a brownie cake mix, eliminating the need for baking powder and other rising agents.  This saves time for lazy bakers like myself, but the result is fantastic.  Make this recipe when you want to use up ripe bananas.

Ingredients:

  • 2 or 3 ripe bananas
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp cinnamon powder
  • 1/2  box brownie mix (9 oz)

Directions:

1.    Caramelizing the Bananas: Peel and slice the bananas in half lengthwise.  In a 9-inch nonstick pan, add the butter and brown sugar, then place the banana slices in the pan.  Heat on low until the bananas are caramelized.

2.    Preparing the Batter: In a mixing bowl, combine the egg, oil, milk, cinnamon, and brownie mix.  Beat until smooth.

3.    Steaming the Cake: Pour the batter over the caramelized bananas in the pan.  Cover with a lid and steam on low heat for 20 minutes, or until set.

4.    Serving: Allow the cake to cool slightly before slicing.  Serve warm or at room temperature.  Enjoy your moist, banana-infused brownie cake!

This method saves time and is perfect for a lazy, indulgent treat.

Cabbage Stir-Fry with Eggs

This quick and nutritious "lazy dinner" is a favorite go-to meal in my kitchen!

Ingredients:

  • 3 cups shredded cabbage
  • 1 small carrot, shredded
  • 2 eggs
  • 2 green onions, sliced
  • 1 cup white onion, sliced
  • 1 garlic clove, minced
  • Seasonings: salt, pepper, sugar, soy sauce, and oyster sauce
  • 2 tbsp peanut oil

Directions:

1.    Preparing the Eggs: In a small bowl, whisk the eggs with a pinch of salt and pepper.

2.    Cooking the Eggs: Heat 1 tablespoon of oil in a nonstick pan over medium heat.  Add the eggs, scramble until cooked through, then remove from the pan and set aside.

3.    Stir-Frying the Vegetables: In the same pan, add the remaining oil.  Sauté the garlic and white onions until fragrant.  Add the shredded carrots and cabbage, stirring for 3-4 minutes.

4.    Seasoning: Add salt, pepper, sugar, soy sauce, and oyster sauce to taste, adjusting as needed.

5.    Combining: Return the scrambled eggs to the pan, mixing well with the vegetables.

6.    Garnishing and Serving: Sprinkle with green onions and serve hot with cooked rice.

Braised Mackerel with Tomato Sauce Recipe

Ingredients:

  • 2 lbs fresh mackerel
  • Tomato Sauce:
    • 4 cups chicken broth or coconut water
    • 2 ripe tomatoes
    • 1 cup pineapple
    • 2 shallots
    • 3 clove site. Bone s garlic
    • 2 fresh chili peppers
    • 2 tbsp caramel sauce (or Vietnamese "nuoc mau")
  • Seasonings: Fish sauce, soy sauce, mushroom seasoning powder, sugar
  • 1 white onion, sliced 2 inches thick
  • 6 green onions, cut into sections
  • 1/4 cup cooking oil

Directions:

1.     Preparing the Mackerel:

·         Clean the fish thoroughly, removing the gills, guts, and any blood near the bones to prevent a fishy smell.  If the fish is large, cut it into smaller pieces.

·         Remove the fishy odor by rinsing with rice water, saltwater, or a mixture of white wine and crushed ginger.  Rinse with clean water and let it drain.

2.     Preparing the Tomato Sauce:

·         Wash and cut the tomatoes into wedges, then blend them with the pineapple until smooth.

·         Blend the shallots, garlic, and chili peppers into a fine mixture.

3.     Marinating the Mackerel:

·         Add 1 teaspoon of the shallot-garlic-chili mixture to the fish, and season with 1 tablespoon of fish sauce, salt, pepper, sugar, and seasoning powder.  Mix well and let marinate for 1 hour.

4.     Arranging the Fish in the Pot:

·         Use a clay pot, cast iron pot, or thick-bottomed pot for braising. Place a layer of white onion and green onion at the bottom of the pot, then layer the mackerel on top.

5.     Preparing the Tomato Sauce:

·         Heat the oil in a pan, then sauté the remaining garlic, shallot, and chili mixture until fragrant.  Add the blended tomato-pineapple mixture along with chicken broth or coconut water.

·         Bring to a boil and season with salt, sugar, soy sauce, seasoning powder, and caramel sauce.  Add fish sauce only at the end for a deeper flavor.

6.     Braising the Fish:

·         Pour the sauce over the mackerel until fully submerged.  Bring the pot to a boil, then reduce the heat to low, skimming off any foam if necessary.

·         Simmer for about 2 hours on low heat with the lid on to prevent the sauce from reducing too much.

·         When the fish is almost done, adjust the flavor with fish sauce and pepper.  If you want more sauce to serve with rice noodles, add more broth or coconut water before the fish is fully cooked.

Tips:

  • Slow cooking allows the fish to absorb the flavors deeply and results in a richly flavored sauce.
  • Add more broth if you prefer extra sauce to serve with noodles or rice.

Easy Pumpkin Box Cake Recipe

October is all about cozy pumpkin treats—whether it's pie, cake, or cookies.  With this recipe, I used a box cake mix to make a pumpkin cake that's so delicious, you’d never guess how simple it is.  I took it to a friend’s party, and everyone thought I’d spent hours in the kitchen!  They couldn’t stop raving about it, and now, I'm excited to share it with you all here.

Ingredients:

  • 1 box yellow cake mix
  • 4 large eggs
  • 1 can (15 oz.) pumpkin purée
  • 1 cup vegetable oil
  • 1/2 cup milk

Spices:

  • 1 tsp cinnamon powder
  • 1 tsp pumpkin spice

Icing:

  • 1 box cream cheese frosting

Equipment:

  • 13×9 in. baking tray
  • Softened butter and flour for greasing

Directions:

1.    Preheat the oven to 350°F (175°C).  Grease a 13x9 inch baking pan with softened butter and a light dusting of flour to prevent sticking.

2.    In a large mixing bowl, combine the eggs, pumpkin purée, vegetable oil, milk, and cake mix.  Add in the cinnamon and pumpkin spice.  Beat the mixture with a handheld mixer until smooth and well-blended.

3.    Pour the batter into the prepared baking pan, smoothing it out evenly.

4.    Bake for 35 minutes or until a toothpick inserted into the center comes out clean.

5.    Allow the cake to cool completely.  Once cooled, spread the cream cheese frosting evenly over the top.
