Mushroom Egg Fu Yung

 

Ingredients:

2 large eggs

3 tbs vegetable oil 

1/3 cup shredded cabbage or beansprouts washed and drained.

2 tbs frozen peas

4 mushrooms, sliced

Seasonings:

1 tsp, salt, soy sauce, sugar, black or white pepper to taste

1 spring onion, sliced thinly

Directions:

Crack eggs into a bowl and whisk well. Add the seasonings.

Blanch the cabbage and peas for 1 minute, then drain.

Heat 1 tbs oil in a wok set to high heat. Add mushrooms and fry the mushroom for 2 minutes.

Add cabbage and peas (fry for 1 minute). 

Add 2 tbs oil into the egg mixture and whisk well.

Pour egg mixture into the wok. Using a spatula, swirl the egg mixture around to scramble it a little while it's still wet. As it starts to cook and take it's shape, then leave it. Cook for 2 minutes, flip it, and cook for another 1 minute. Then serve and garnish with spring onion.

Tip:

This recipe is to serve one. You can double or triple the ingredients to make for a larger group.

 


Easy Lemon Pound Cake

 Ingredients:

Dry ingredients:

1 ½ cups self-rising flour

Wet ingredients:

1/4 cup softened butter

1/4 cup oil

1/2 cup sugar

2 tbs lemon juice

1 tbs lemon zest

2 eggs

1/2 cup milk

Glaze:

2 tbs lemon juice

1/3 cup powdered sugar

Equipment:

9×4 in. loaf pan

Parchment paper

A whisk

Directions:

Preheat oven to 350°.

In a medium mixing bowl, add sugar and lemon zest. Use whisk to mix them well. 

Add soft butter and eggs and continue to whisk them well until light in color.

Add oil and milk and continue to mix them well.

Sift flour into the egg mixture and use the whisk or spatula to combine them. 

Pour the batter into the prepared loaf pan and bake in the preheated oven for 40 minutes or until a toothpick inserted in the center comes out clean.

To make the glaze:

In a small bowl, whisk the lemon juice and powdered sugar together. 

When the cake cools off, pour the glaze over the cake.

Tips:

You can use an electric hand-held mixer to make this cake. All the wet ingredients have to be at room temperature.

One lemon is big enough to make the juice and zest for this cake. Divide it.

The amount of butter and oil can be used according to your taste and availability.

You can add 1 ½ tsp baking powder to 1 ½ cups all-purpose flour; if self-rising flour is not available, then add 1/8 tsp salt.

No Knead Pizza Dough For One

People when it comes to pizza are hesitant to make it at home.  Of course! You can buy pre-made pizza dough, and it's now widely available from fresh to frozen at the supermarket. However, the pizza dough that you can make at home is tastier, and it is very easy to make. Today, I'm going to share a pizza dough recipe that anyone can make.  It doesn’t require kneading the dough. This recipe is also for those of you who live alone and don't take much of your time to impress your friends. 

Ingredients:

1 ½ cups all-purpose flour

1 tsp active yeast

Wet ingredients:

1/2 cup water

1 tsp sugar

1 tsp oil

1/2 tsp salt

Directions:

Combine the wet ingredients in a bowl and mix well.

In a mixing bowl with lid, add flour and yeast and mix well.

Pour the wet ingredients into the dry ingredients such and mix well.

Cover with lid and let slow rising for 8 hours or overnight.

This recipe can make 9 to 10 inches diameter pizza dough, or you can divide into 2 small portion thin ones.

Use a rolling pin to roll out the dough. Use a pizza plate to place the dough on.

Preheat oven to 400° and prebake the pizza crust for 10 minutes before put the toppings of your choice such as, sausages, pepperoni, chicken, shrimp, etc.... The pizza sauce you can buy in the store to save you time.

Oatmeal Raisins Cookies

 This is an easy, healthy recipe that can be made in minutes with a few ingredients already in your kitchen.  It will make even the pickiest person satisfied.

Ingredients:

3/4 cup self-rising flour

1/3 cup oatmeal

3 tbs brown sugar

1/4 cup vegetable oil

1/3 cup raisins

Directions:

Preheat oven to 350°.

Line a small baking sheet with parchment paper.

Combine all the ingredients in a mixing bowl. Mix well.

Use small ice cream scoop to divide cookies dough into 1 inch diameter cookies.

Place onto the baking sheet and bake for 11 minutes.


Almond-Coconut Cookies

Ingredients:

3/4 cup self-rising flour

1/4 cup almond flour

2 tbs coconut flour

2 tbs brown sugar

2 tbs vegetable oil

1/3 cup chopped nuts (your choice)

Directions:

Preheat oven to 350°.

Line a small baking sheet with parchment paper.

Combine all the ingredients in a mixing bowl. Mix well.

Use small ice cream scoop to divide cookies dough into 1 inch diameter cookies. 

Place onto the baking sheet and bake for 11 minutes.

African Spice

Ingredients:

Equal 1/8 cup of the following:

Garlic powder

Cumin

Coriander

Paprika

Ginger

Cinnamon

All spice

Turmeric

Cayenne

Directions:

In a small mixing bowl, combine all the ingredients and mix well. Store in an airtight container.

Use this spice for fish, chicken, or beef.

Make a paste by using olive oil for each recipe and spread over fish or chicken. 

The spice can be used for soup or stewed meat as well.


Stir-fried Eggplant with Vegetables

Ingredients:

1 Japanese eggplant

1 cup combination of the following:

Cabbage, carrot, zucchini, and sweet bell pepper

1/2 cup white onions, cubed

1 garlic clove, minced

1/4 tsp minced ginger

Stir-fried sauce ingredients:

1/2 cup water 

1 tbs chicken powder or mushroom seasoning

1 tbs soy sauce

1 tbs oyster sauce

1 tbs sugar

1 tsp sesame oil

Thickening ingredients:

1 tsp cornstarch mix with 2 tsp water

Other necessities: 

1 cup oil for deep frying 

Directions:

Wash and cut eggplant into 1 inch cubes or pieces or your choice. Soak eggplant in a bowl of water with salt for 20 minutes and drain.

Cut the vegetables to make one cup. 

Combine the sauce ingredients in a bowl and mix well.

Heat oil in a wok and fry the eggplant for 40 seconds. Remove.

Add vegetables and white onion into the hot oil and cook for 30 seconds.

Pour off the oil and keep about 2 tbs of oil.  Add garlic and ginger. Stir-fry until fragrant.

Add sauce and bring to boil. Add eggplant and vegetables to the boiling sauce. Cook for 5 minutes and add the thickening sauce. Cook for 2 minutes.

Ready to serve over steamed rice.

Tips:

Blanch the vegetables in hot boiling water is another way for healthier way to make this recipe. The rest of the step following the same instructions


 

 


Creamy Salmon Soup

 Ingredients:

8 oz. salmon fillet, cut bite size pieces

1 potato, peeled and cubed

1/4 cup white onion, minced

1 small carrot, peeled and cubed

2 1/2 cups fish broth or vegetable broth

1/4 cup heavy cream or coconut milk

Seasonings:

1/4 tsp each of salt, pepper,cumin, coriander, fennel seed

Garnish with 2 tbs fresh chopped dill

Serve with crouton or cracker.

Directions:

In medium saucepan, add 1/2 tbs of oil. Stir in the seasonings and onions. Stir and cook until fragrant (about 2 minutes). Add broth. 

Bring broth to boil, then add potato and carrot. Cook for 10 minutes.

Add salmon and simmer for 5 minutes. Pour cream into the pot and bring it back to boil. Turn heat off.

Sprinkle with dill.

Easy Shrimp Scampi

This is easy shrimp scampi for a quick dinner. This recipe can used for a topping on pizza or tossed with noodles.

 

Ingredients:

1/2 lb. of shrimp, shelled and deveined

Sauce ingredients:

2 tbs softened butter

2 tbs oil

1 tsp minced garlic

1 tsp minced shallot

2 tbs chopped chives

1 tsp salt 

1/4 tsp black pepper

1/8 tsp paprika

1 tbs lemon juice or lime juice

Serve with bread, noodles. 

Directions:

Combine the sauce ingredients except the lemon juice and mix well.

 Add shrimp and toss well.

Heat a medium sauté pan and add shrimp. Stir and cook the shrimp until all the shrimp turn pink. Add the lemon juice and remove from heat.

Serve

 


Vietnamese Dipping Sauce



 Ingredients:

1 cup fish sauce

2 cups water

1 cup sugar

1/3 cup vinegar

1/1 tbs salt

2 slices of fresh pineapple or 1 cup frozen pineapple

Directions:

Bring water to boil; then add the rest of the ingredients.  Turn heat down to simmer and cook for 10 minutes. Let it cool. Remove the pineapple. Store in a glass jar with lid in the refrigerator.

To make a dipping sauce.

Add lemon juice, garlic, and chillis every time you want to use for egg rolls, grilled chicken or pork.


Basic Scone

 Ingredients:

1 cup all purpose flour

4 oz. cold butter

1/4 cup sugar

1/8 tsp salt

1/2 tbs baking powder

Wet ingredients:

1/2 egg

1/4 cup heavy cream

Spices:

Cinnamon, vanilla, and nutmeg

Fruit:

cranberries, blueberries, and raisins

Directions:


In the bowl add flour then work the butter into the dough using your fingers.

Add sugar, cinnamon, salt and baking powder.

Whisk the heavy cream and egg together.

 Stir the egg mixture into the flour mixture.

Add Fruits if using. slightly form the dough into a circle

Transfer the dough to a floured surface and pat into a circle., about 1 inch thick.

Sprinkle the dough with sugar and cut it into triangles. 

line the baking sheet with parchment paper and transfer the dough into the baking sheet.

 Bake the scones in a preheated oven until golden brown., about 15 minutes




Easy Thai Iced Tea

 

 

Ingredients:

1/2 cup loose Thai Tea 

2 ½ cups water

1 bag black tea (optional)

1/3 cup sugar

Directions:

Combine all the ingredients and bring to boil. Turn heat to low and simmer for 5 minutes. Turn the heat off and let the tea seep for 20 minutes. Drain. 

Serve tea over ice with half and half.  You might enjoy with heavy cream or condensed milk. The sweet taste is up to each individual.
