Oven-Steamed Trout with Asian Sauce

In America, trout, primarily rainbow, are farm-raised for food. In Costco, trout is the least expensive fish and always available. Think of trout as the ultimate healthy food choice – low in fat, high in protein, and rich in beneficial Omega-3 fatty acids. Trout deserves to be served on the kitchen table of more households. When compared to other seafood, trout is very affordable and has only one drawback, its small bones, for which diners need to be more careful while enjoying this fish. Trout can be made as a fancy restaurant meal or can simply be grilled outdoors in the summer. The delicate flavor adapts to many settings, and the recipe here is the result of a simple cooking method for trout.

Ingredients:
Two 6 oz trout, cleaned & boned
Sauce
1 tbs sesame oil
2 tbs dry sherry
2 tbs mirin
2 tbs soy sauce
2 tbs fresh ginger, finely slivered
1/4 tsp black pepper
1/8 tsp cayenne pepper or chili flakes
Garnish
1/4 cup green onions, finely slivered
1/4 cup cilantro chopped

Directions:
Rinse trout and pat dry.
In a small bowl, combine the sauce ingredients.
Lay fish, open and skin side down, in a single baking dish.

Divide the sauce ingredients equally and pour over the trout.

Cover the baking dish completely with foil.

Bake in oven for 400° for 10 minutes. Remove foil and cover trout equally with green onions and cilantro, and bake for 5 more minutes before removing from oven. Add more soy sauce to taste if needed before serving.
