Ingredients:
1 cup muffin mix or self-raising flour
1/4 cup sugar
2 tbs melted coconut oil, butter, or margarine
1 tbs Chia seeds gel
1/2 cup coconut milk or regular milk
1/3 cup orange juice
1 egg
1/4 cup chopped pecans
1/2 cup dried cranberries
1/4 cup coconut flakes
1 tsp vanilla
Directions:
Preheat oven to 350°.
Line a muffin pan with 7 to 10 paper muffin liners.
In a bowl, combine egg, sugar, melted coconut oil, and Chia seeds gel and beat well.
Add milk and orange juice. Beat in muffin mix and vanilla well.
Stir in cranberries and nuts.
Spoon the batter into the prepared muffin liners to 3/4 full.
Top with coconut flakes.
Bake in the preheated oven for 25 minutes.
