Ingredients:
2 Japanese eggplants
4 garlic cloves, minced
2 stalks of green onions, finely chopped
Stir-fry sauce ingredients:
1 teaspoon of miso paste
2 tablespoons of soy sauce
2 tablespoons of mirin
1 tablespoon of sugar
1/4 cup of water
1 teaspoon of mushroom seasoning

Directions:
Cut the eggplant into bite-sized pieces and
soak them in salted water for about 10 minutes. This will help to remove the

Drain the eggplant and pat it dry with
paper towels.
