Spicy Salmon Corn Patties

I know all about how food affects our health. It’s clear that eating to reach and maintain a healthy weight is a fundamental part of the equation. Most of my recipes evolve around these methods. The most important message of maintaining a healthy weight is a message that we would all be well to hear. Fortunately, my recipes are very easy and moderate the fat content as is the one I will introduce today. Our body needs some fat; therefore, using some good oils and pan frying instead of deep frying is another way to add some fat to the meal. Two main ingredients in this recipe are salmon and corn, and both of them are very good sources of lean protein and fiber. I hope this recipe will be frequently appearing at breakfast or dinner in your house.

Ingredients:
Two cups frozen corn, thawed
One 6 oz salmon fillet, diced
1/4 cup corn meal
1/4 cup rice flour
2 garlic cloves, chopped
1/2 cup total of cilantro and green onions, chopped
2 tsp taco seasoning powder
1/2 tsp cayenne
1 tsp salt
1/4 tsp black pepper
2 tsp lemon juice
1/4 cup peanut oil

Directions:
Blend corn very well in a Vitamix or other blender.
In a mixing bowl, combine blended corn, rice flour, corn meal, diced salmon, chopped garlic, cilantro, and green onions. Season with taco powder, salt, pepper, cayenne, and lemon juice. Shape into 6 patties about 4 inches in diameter.
Heat oil in a sauté pan. Place patties on the hot oil. Fry each side of patty until crispy. Serve with sweet soy dipping sauce.

Sweet soy dipping sauce:
1/4 cup hot water
1/4 cup soy sauce
1/4 cup ponzu sauce (Japanese dipping sauce)
1tbsp sugar
2 tbsp rice vinegar
Chopped garlic, lemon juice and hot chili can be added
