Tofu Stir-Fried with Eggs and Tomatoes

If you're looking for a simple, nutritious vegetarian dish, this recipe is a must-try.  Tofu, made from soybeans, is an excellent source of protein and essential amino acids.  Combined with the vitamins from tomatoes and the richness of eggs, this dish is both healthy and flavorful.  Plus, tomatoes are known for promoting smooth skin and reducing wrinkles over time.

Ingredients:

Main ingredients:

  • 8 oz. firm tofu, cut into bite-sized cubes
  • 1 tomato, sliced
  • 2 eggs, beaten
  • ½ cup white onion, chopped

Sauce ingredients:

  • 1/ 4 cup water
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (vegetarian if needed)
  • 1 tsp sugar
  • 1 tsp vegetarian seasoning
  • ½ tsp salt
  • 1 tsp cornstarch

Seasonings & Garnish:

  • 1 tsp minced garlic clove
  • 1 tsp minced ginger
  • ¼ tsp black pepper
  • Oil for stir-frying
  • Chopped green onions for garnish
  • Steamed white rice for serving

Directions:

1.    Preparing the sauce: In a small bowl, mix water, soy sauce, oyster sauce, sugar, vegetarian seasoning, salt, and cornstarch.  Stir well and set aside.

2.    Frying the tofu: Heat oil in a pan over medium heat.  Add tofu and fry until golden brown on both sides.

3.    Sautéing aromatics: Add garlic and ginger to the pan, stirring until fragrant.

4.    Cooking the vegetables and eggs: Add tomatoes, white onions and stir-fry for 1-2 minutes.  Pour in the beaten eggs and mix gently with the tofu.

5.    Adding the sauce: Pour the prepared sauce into the pan and stir well.  Let it simmer until the sauce thickens and coats the ingredients evenly.

6.    Final touch: Sprinkle with black pepper and chopped green onions.

7.    Serving: Enjoy hot with steamed white rice.
