Easy Pound Cake

Most of the pound cake recipe is very heavily in the butter-that why it call pound cake, pound of butter. Pound cake is one of the easy way to end the meal with fruits or ice cream topping. I love pound cake but the butter is concerned me. One day I found this easy recipe pound cake from the southern cooking magazine with surprisingly very little butter. The sour cream in the recipe help moisten the cake; I replace sour cream with non fat yogurt to keep the calories in control . The cake turned out very good.
Ingredients:
1/4 stick butter  room temperature
1/4 cup coconut oil
1 cup sugar
1/2 cup non fat yogurt
1 1/2 cup All-purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
3 eggs room temperature
1 tsp vanilla extract
Directions:
Preheat oven to 350°f . Grease and flour loaf pan.
In a bowl sift the flour, baking powder and baking soda together.
In a large mixing bowl ,  cream the butter and sugar together. Add nonfat yogurt and mix until incorporated. Add eggs one at a time alternate with flour into cream mixture. Pour the batter into the prepare loaf pan and bake in preheat oven for 40 to 1 hour or until toothpick inserted into the center of the cake comes out clean. Let cool completely before serving.
