Tilapia Baked in Herbs Butter Sauce

Simple light butter sauce is a good choice for baking tilapia.  
Ingredients:
Two 6 oz tilapia fillets
1 tsp margarine or low fat butter
1 tsp coconut oil
1/4 tsp salt
1 tsp paprika
1/4 tsp black pepper
1 tsp fresh chopped parsley
1 tsp fresh tarragon, chopped
1 tsp fresh thyme, chopped
1 tsp yellow mustard

Directions:
In a saucepan over medium heat, add margarine and coconut oil. Cook until melted. Stir in salt, black pepper, paprika, mustard and all the chopped herbs. Turn heat off.
In a baking dish, brush the herbs mixture all over the bottom of the baking dish. Place tilapia onto the dish and brush fish with more sauce on top. Cover baking dish with foil and marinate for 1 hour. Preheat oven to 350° and bake fish for 15 minutes. Remove foil and bake for 5 more minutes. Squeeze some lemon juice on the tilapia before serving.



Tip: If fresh herbs are not available, replace with dried herbs (1/2 tsp each).
