EATING FRUIT - This opened my eyes.

Dr Stephen Mak treats terminal ill cancer patients by "un-orthodox" way and many patients recovered. Before he used solar energy to clear the illnesses of his patients. He believes on natural healing in the body against illnesses. See his article below.
Thanks for the email on fruits and juices. It is one of the strategies to heal cancer. As of late, my success rate in curing cancer is about 80%. Cancer patients shouldn't die. The cure for cancer is already found. It is whether you believe it or not. I am sorry for the hundreds of cancer patients who die under the conventional treatments.
Thanks and God bless.

EATING FRUIT...

We all think eating fruits means just buying fruits, cutting it and just popping it into our mouths. It's not as easy as you think. It's important to know how and when to eat.

What is the correct way of eating fruits?

IT MEANS NOT EATING FRUITS AFTER YOUR MEALS! * FRUITS SHOULD BE EATEN ON AN EMPTY STOMACH.
If you eat fruit like that, it will play a major role to detoxify your system, supplying you with a great deal of energy for weight loss and other life activities.

FRUIT IS THE MOST IMPORTANT FOOD. Let's say you eat two slices of bread and then a slice of fruit. The slice of fruit is ready to go straight through the stomach into the intestines, but it is prevented from doing so.

*In the meantime the whole meal rots and ferments and turns to acid. The minute the fruit comes into contact with the food in the stomach and digestive juices, the entire mass of food begins to spoil....

*So please eat your fruits on an empty stomach or before your meals! You have heard people complaining — every time I eat watermelon I burp, when I eat durian my stomach bloats up, when I eat a banana I feel like running to the toilet, etc — actually all this will not arise if you eat the fruit on an empty stomach. The fruit mixes with the putrefying other food and produces gas and hence you will bloat!

*Greying hair, balding, nervous outburst and dark circles under the eyesall these will NOT happen if you take fruits on an empty stomach.

*There is no such thing as some fruits, like orange and lemon are acidic, because all fruits become alkaline in our body, according to Dr. Herbert Shelton who did research on this matter. If you have mastered the correct way of eating fruits, you have the Secret of beauty, longevity, health, energy, happiness and normal weight.

*When you need to drink fruit juice - drink only fresh fruit juice, NOT from the cans. Don't even drink juice that has been heated up. Don't eat cooked fruits because you don't get the nutrients at all. You only get to taste. Cooking destroys all the vitamins.

*But eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it. You can go on a 3-day fruit fast to cleanse your body. Just eat fruits and drink fruit juice throughout the 3 days and you will be surprised when your friends tell you how radiant you look!

*KIWI: Tiny but mighty. This is a good source of potassium, magnesium, vitamin E & fiber. Its vitamin C content is twice that of an orange.

*APPLE: An apple a day keeps the doctor away? Although an apple has a low vitamin C content, it has antioxidants & flavonoids which enhances the activity of vitamin C thereby helping to lower the risks of colon cancer, heart attack & stroke.

*STRAWBERRY: Protective Fruit. Strawberries have the highest total antioxidant power among major fruits & protect the body from cancer-causing, blood vessel-clogging free radicals.

*ORANGE : Sweetest medicine. Taking 2-4 oranges a day may help keep colds away, lower cholesterol, prevent & dissolve kidney stones as well as lessens the risk of colon cancer.

WATERMELON: Coolest thirst quencher. Composed of 92% water, it is also packed with a giant dose of glutathione, which helps boost our immune system. They are also a key source of lycopene — the cancer fighting oxidant. Other nutrients found in watermelon are vitamin C & Potassium.

*GUAVA & PAPAYA: Top awards for vitamin C. They are the clear winners for their high vitamin C content.. Guava is also rich in fiber, which helps prevent constipation. Papaya is rich in carotene; this is good for your eyes.

*Drinking Cold water after a meal = Cancer! Can u believe this?? For those who like to drink cold water, this article is applicable to you. It is nice to have a cup of cold drink after a meal. However, the cold water will solidify the oily stuff that you have just consumed. It will slow down the digestion. Once this 'sludge' reacts with the acid, it will break down and be absorbed by the intestine faster than the solid food. It will line the intestine. Very soon, this will turn into fats and lead to cancer. It is best to drink hot soup or warm water after a meal.

*A serious note about heart attacks HEART ATTACK PROCEDURE': (THIS IS NOT A JOKE!) Women should know that not every heart attack symptom is going to be the left arm hurting. Be aware of intense pain in the jaw line. You may never have the first chest pain during the course of a heart attack. Nausea and intense sweating are also common symptoms. Sixty percent of people who have a heart attack while they are asleep do not wake up. Pain in the jaw can wake you from a sound sleep. Let's be careful and be aware. The more we know the better chance we could survive.

Chicken-Eggplant Soup

This recipe is from the North of Vietnam and is popular as the Hu tieu from the South of Vietnam. My mom made this recipe all the time when I am growing up. In her kitchen, "me" is the fermented rice is one of the ingredients to create authentic "Ca Bung". However, living in America the fermented rice is not what I like to consume. I do not want to create the authentic Ca bung the way my mother did, because I like to use chicken breasts instead of pork ribs or bacon. I like to stick with my healthy diet so this recipe is made me so proud and happy to share it in my blog. The herb perilla is a very important to have in this dish and cannot be replaced with other herbs. I visited my sister in California last week and took some perilla home from her garden. This childhood dish is alive with some of new modifications.

Ingredients:
1 medium Eggplant, cubed
1 chicken breast, cubed
2 cups chicken broth
2 shallots, minced
2 garlic cloves, minced
1/4 cup tamarind juice or lemon juice
1 tsp turmeric
3 tomatoes, cut into wedges
1 cup chopped perilla

Fish sauce, salt, pepper
2 tbs oil
Garnish with sliced green onions
Serve with rice noodles, rice

Directions:
Heat oil in a medium pot. Add shallots and garlic. Stir to cook until fragrant.

Add chicken and brown the chicken for 2 minutes. Stir in tomatoes and turmeric.

Cook tomatoes for 2 minutes and then add eggplant.

Add broth and season the soup with fish sauce, salt, sugar, and black pepper.
Bring to boil and simmer for 15 minutes or until chicken and eggplant are tender,
Add perilla herbs and green onions.

If served with noodles, place noodles on the bottom of the bowl and top with ca bung.

If served with rice, have a bowl of rice on the side with ca bung.

Adjust the sourness to your taste. Enjoy!!

Easy Crockpot Vegetarian Mixed Baked Beans

For vegans, beans are the fantastic source of protein and fiber and they should use a variety of beans, such as black, white, pinto, and red beans. I love baked beans, but the bacon fat and sweetness from brown sugar are not what healthy eating is all about. For that, I like to create my own healthy baked beans and hope this recipe will encourage healthy bean lovers try to make it for themselves. Especially this is the mixed beans; I think it is much easier to consume with all the healthy beans in this one recipe.

Ingredients:
1 cup mixed beans soaked for 10 hours*

2 cups water
2 tbs coconut oil
1/2 white onion, chopped
2 garlic cloves, minced
1 tbs blackstrap molasses
2 tbs honey
1 tbs brown sugar
2 tbs tomato paste
1/4 cup ketchup
Salt and pepper to taste

Directions:

Use the coconut oil to coat the inner crockpot. Add all the ingredients into the crockpot. Cover and cook slowly overnight or for  10 hours.

 Adjust the seasoning before serving.
* To make the mixed beans:
Mix equal amounts of beans, such as black, red, white, pinto, kidney, and black eye peas. I believe all these beans can be cooked at the same amount of time.

Tuna Stew with Tomato Sauce

Tuna or mackerel is a very special fish because its meat is high in nutrients, but the fat content is low, and that is one of the reasons that the housewife is very fond of it. Mackerel can be prepared into a variety of delicious dishes, such as stew, deep-fried, baked, and steamed. One of my favorite dishes is tomato sauce. Tuna comes in different sizes, and it depends on where it came from. Despite the appearance of the tuna, this recipe never fails, and it is easy for family meals. I like to prepare this dish during summer with plenty of fresh tomatoes, which are quite inexpensive in the markets or to me from my garden.

Ingredients:
1 to 2 lbs. tuna, cut into pieces
1 lb. tomato cut into wedges
2 garlic cloves, minced
2 shallots, chopped
2 fresh chopped chilies
1 cup chopped onions
1/4 cup peanut oil
Sauce seasoning ingredients:
1/2 cup water or chicken broth
1 tbs fish sauce
1 tsp sugar
1/2 tsp salt, black pepper

Serve with black or white rice

Directions:
Wash tuna pieces in salted water and pat dry.
In a deep saucepan, heat oil and deep-fry tuna until golden brown. Remove onto plate.
In the same pan, stir in onions and garlic. Stir and cook for 2 minutes or until fragrant. Add chopped tomatoes.
Add broth or water to cook tomatoes further or until almost tender. Return tuna to the sauce and add seasoning. Adjust the seasoning while tuna is cooking in the tomato sauce.
Turn the fish twice.
Add chopped green onions when the sauce has thickened. Serve.

Spicy Chicken Stew

In the Vietnamese Cuisine, stew is a regular meal that is served in every house. It normally comes with big cutting meat. In some cases, pig legs are the prefer choice; it is called "thit heo hon". I like the spicy ingredients in this dish because all of them are very healthy choices to consume daily, such as ginger, garlic, turmeric, and lemongrass. I like to adapt this recipe to my easy healthy eating habit by using chicken instead of pig legs. It turns out very well and is much healthier. Here it is!

Ingredients:
3 skinless chicken legs and thighs
1 cup cooked peanuts
1/2 cup chicken broth or water
Spicy marinade ingredients:
1 tbs chopped lemongrass
1 tsp fresh chopped ginger
3 garlic cloves, minced
1/2 tsp turmeric
1 tsp curry powder
1/4 tsp five spice
1 tbs oil
1 tbs cooking wine
1 tbs fish sauce
1/2 tsp salt
1/4 tsp black pepper
1 tbs honey

Garnish with chopped cilantro and green onions

Directions;
Remove the cooked peanuts skin and set a side.
Cut the chicken into big chunks (about 1 and 1/2 inch pieces to 2 inches).

In a mixing bowl combine the spice ingredients. Add chicken and mix well. Marinate for a few hours.
Heat 1 tbs peanut oil in a large pan. Add the chicken with the marinade and brown them for a few minutes or until you can smell the fragrance from all the spices.
Add chicken broth and bring to boil. Cover and simmer for 15 minutes. Add cooked peanuts and continue to simmer until the meats are tender. Adjust the seasoning with more sugar or salt.
Sprinkle with chopped cilantro and onions. Serve with cooked rice.

Blackberry Jam Cupcakes

I make muffins more often than cupcakes because cupcakes need more skill. As my frequent bloggers, my skill for baking is very low. However, sometime, I like to make cupcakes. Especially, during summer time in the Northwest, blackberry every where. All my friends are picking them and make jam. The deal we make between us is they give me their jam to make cupcakes for our lunch or afternoon tea. This is an easy basic cupcake recipe. However, all my friends love it.

Ingredients:
1 cup self-rising flour
1/3 cup soft butter or margarine
1/3 cup sugar
1/2 cup milk
1 tsp vanilla
1 egg
1/3 cup blackberry jam

Directions:
Preheat oven to 350°.
Line muffin tins with 12 paper liners.

Place sugar and butter in a bowl. Use a handheld mixer to beat mixture until light and fluffy.

Add egg and continue to beat for 2 minutes. Add milk and continue to beat well.
Add vanilla and stir well.
Sift the flour into the egg mixture and gently use a wooden spoon to fold in the flour.

The batter should have a smooth batter.

Use spoon to spoon the batter into the paper liners.
Divide the jam and place in the middle of the each paper liner.

Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Tip: With this amount of batter, I should use the smaller size cupcakes. It should be 8 regular size cupcakes instead of 12.

Stir-Fried Chicken with Basil

During summer time, this dish is a regular meal for my family because I can grow basil or farmer markets sell basil at a fraction of cost compared to grocery stores. Basil has different kinds from the sweet Italian to the cinnamon-spicy Thai basil. With this recipe, I use all kinds of basil that I can find during summer time .The medicinal value of consuming basil more often can help eliminate gas and digestive disorder, boost appetite, and sooth stomach pain. For an easy, healthy habit of eating, this dish makes the list of my choice and I hope it will be soon in everyone’s kitchen.

Ingredients:
1 lb. cut-up chicken breast
4 cups basil leaves
2 garlic cloves, minced
1 tsp fresh ginger, minced
1/2 cup red onions, diced
1 jalapeno, sliced
2 tbs peanut oil
Marinade ingredients:
1 tbs cornstarch*
1 tbs cooking wine
1/2 tsp salt
1 tsp oil
Stir-fry sauce ingredients:
1/2 cup chicken broth
1/2 tbs fish sauce
1 tbs soy sauce
1 tbs honey

Directions:
Place chicken in a bowl and add the marinade. Stir to combine; let the chicken marinate for one hour.
Combine the stir-fry sauce and set aside.
Heat oil in nonstick wok. Add red onion, garlic, and ginger. Stir and cook until fragrant about 1 minute or until the onions are softened.

Add chicken and stir-fry for 4 to 5 minutes or until chicken turns white.

Add stir-fry sauce and bring to boil. Adjust the seasoning with more fish sauce and some sugar to suit your taste.

Add basil and jalapeno in the last few minutes. Make a quick stir and serve.

* I use agar powder instead of cornstarch for sauce thickening. Use 1 tsp agar powder.

Easy Oyster Omelette

I have been busy lately, but it also gave me many ideas to create a healthy meal without compromising my principled eating habit. This recipe is one of my favorite choices to whisk up a healthy meal. Oysters in a jar sell at Costco or other grocery stores are a perfect choice for this dish. Oysters and eggs are a good combination to provide enough protein to satisfy daily requirements. If you are single and living alone, this dish is for you. Enjoy!

Ingredients:
1 egg
2 tbs ground turkey
2 tbs milk
4 oysters
1 scallion, sliced
1 mushroom, chopped
1 tbs chopped water chestnut
Salt, soy sauce, and black pepper to taste
1 tsp peanut oil

Directions:
In a mixing bowl, beat egg, scallion, oysters, and milk. Season with salt, soy sauce, and pepper (about 1/4 tsp salt and 1/2 tsp soy sauce).

Heat 1 tsp oil in a wok; stir in ground turkey until brown. Add chopped mushroom and water chestnut and cook for 2 minutes.

Pour the egg mixture into the pan and cook, lifting the edges of the omelette as the egg sets so the uncooked egg can run underneath.

Cook for 2 minutes until just set.

Turn over and cook for another 1 minute or so. Serve with rice or bread. Sprinkle with chopped cilantro.

Mindfulness Live at the moment

THICH NHAT HANH´S GATHAS

Dwelling in the present moment, We can see so many beauties and wonders right before our eyes–a child’s smile, the sun rising, the autumn leaves. We can be happy just by being aware of what is in front of us. Practicing with a gatha can help us return to ourselves and to what is going on in the present moment. It is helpful to memorize these gathas, a few at first, and more as You go on with the practice. As You silently recite the first line, breathe in; and as You silently recite the second line, breathe out. When the gatha is finished, continue your activity, and You will find that your mindfulness has increased. When We drive, road signs help us find our way. We “see” the last sign until the next one appears. Practicing with gathas is the same. When we practice well, the gathas are with us continuously, and we live our whole day in awareness.

1 Waking Up Waking up this morning, I smile.

Twenty-four brand new hours are before me.

I vow to live fully in each moment

and to look at beings with eyes of compassion.

Walking on the Earth is a miracle!

Each mindful step reveals the wondrous Dharmakaya.

Water flows over these hands.

May I use them skillfully to preserve our precious planet.

I vow to speak purely and lovingly.

When my mouth is fragrant with right speech,

a flower blooms in the garden of my heart.

8 Rinsing Your Mouth

Rinsing my mouth, my heart is cleansed.

The universe is perfumed by flowers.

Actions of body, speech, and mind are calmed.

Hand in hand with the Buddha, I walk in the Pure Land.

9 Using the Toilet

The bowl of the Tathagata is in my two hands.

Giver, receiver, and gift held in perfect oneness.

18 Before Eating

The Buddha advises us to be mindful while we eat, to be in touch with the Sangha and the food. Brothers and sisters, when you hear the bell, meditate on the Five Contemplations:

This food is the gift of the whole universe, the earth, the sky, and much hard work.
May we be worthy to receive it.
May we transform unskillful states of mind, especially the habit of eating without moderation.
May we take only foods that nourish us and prevent illness.
We accept this food to realize the path of understanding and love.
19 Holding the Empty Bowl

Looking at this bowl, I see how fortunate

I am to have enough to eat to continue the practice.

20 Serving

Food In this food, I see clearly the entire universe supporting my existence.

21 Before Eating

Beings all over the Earth are struggling to live.

I aspire to practice deeply so all may have enough to eat.

22 Beginning to Eat

With the first taste, I offer joy.

With the second, I help relieve the suffering of others.

With the third, I see others’ joy as my own.

With the fourth, I learn the way of letting go.

23 Looking at Your Plate or Bowl

after Eating The meal is finished, and I am satisfied.

The four gratitudes are deeply in my mind.

24 Inviting the Bell to Sound (Version 1)

Body, speech, and mind held in perfect oneness,

I send my heart along with the sound of the bell.

May the hearers awaken from forgetfulness and transcend all anxiety and sorrow.

25 Inviting the Bell (Version 2)

May the sound of this bell penetrate deeply into the cosmos.

In even the darkest spots, may living beings hear it clearly,

so their suffering will cease, understanding arise in their hearts,

and they can transcend the path of anxiety and sorrow.

Namo Shakyamunaye Buddhaya.

26 Inviting the Bell (Version 3)

May the sound of this bell penetrate deeply into the cosmos so that beings,

even those in dark places, may hear it and be free from birth and death.

May all beings realize awakening and find their way home.

Namo Shakyamunaye Buddhaya.

27  Listening to the Bell (Version 1)

Listen, listen, this wonderful sound brings me back to my true home.

28  Listening to the Bell (Version 2)

Listening to the bell, I feel my afflictions begin to dissolve.

My mind is calm, my body relaxed, a smile is born on my lips.

Following the bell’s sound, my breathing guides me back to the safe island of mindfulness.

In the garden of my heart, the flower of peace blooms beautifully.

Namo Shakyamunaye Buddhaya.

Listening to the Bell (Version 3)
Hearing the bell, I am able to let go of all my afflictions.

My heart is calm, my sorrows ended.

I am no longer bound to anything.

I learn to listen to my suffering and the suffering of the other person.

When understanding is born in me, compassion is also born.

30 Impermanence

The day is ending and our life is one day shorter.

Let us look carefully at what we have done.

Let us practice diligently, putting our whole heart into the path of meditation.

Let us live deeply each moment and in freedom,

so the time doesn’t slip away meaninglessly.

31 Praising the Buddha

The Buddha jewel shines infinitely.

He has realized perfect enlightenment for countless lifetimes.

The beauty and stability of a Buddha sitting can be seen in the mountains and rivers.

How splendid is the Vulture Peak!

How beautiful the light that shines forth from Buddha’s third eye illuminating the six dark paths.

The Nagapuspa assembly will be our next appointment for the continuation of the true teachings and practices.

We take refuge in the Buddha ever-present.

32 Praising the Dharma

The Dharma jewel is infinitely lovely.

It is the precious words spoken by the Buddha himself,

like fragrant flowers floating down from the heavens.

The wonderful Dharma is plain to see.

It is recorded luminously in three transparent baskets,

handed down from generation to generation in the ten directions,

so that today we can see our way.

We vow to study it with all our heart, and take refuge in the Dharma ever-present.

Praising the Sangha
The Sangha jewel is infinitely precious,

a field of merit where good seeds can be sown.

Sangha is my five skandhas working in harmony.

Breathing in, breathing out.

 Flower, fresh. Mountain, solid.

Water, reflecting. Space, free.

35 Breathing (Version 2)

Breathing in, I know I am breathing in.

Breathing out, I know I am breathing out.

As my in-breath grows deep, my out-breath grows slow.

Breathing in, I calm my body Breathing out, I feel ease.

Breathing in, I smile Breathing out, I release.

 Dwelling in the present moment,

I know this is a wonderful moment.

The door to no-birth, no-death has opened

Free and unshakable I dwell.

37 Smiling

 at Your Anger Breathing in,

I know that anger makes me not beautiful.

Breathing out, I smile.

I stay with my breathing so I won’t lose myself.

38 Turning on the Computer

Turning on the computer, my mind gets in touch with the store.

I vow to transform habit energies to help love and understanding grow.

39 Driving the Car

Before starting the car

 I know where I’m going.

The car and I are one.

If the car goes fast, I go fast.

Easy Kale Chips

I usually use kale in many dishes from boiled to making juice. In my opinion, kale should not be used for juicing because kale does not have much juice and lots of fiber from the kale. Adding kale to smoothies is also a way to bring kale into your body every d. However, in order to eat a lot of kale without being bored, kale chips are one of the most popular snacks. Today, I will share a recipe for making kale chips using a microwave. The results are wonderful because the spices that accompany the kale are coconut oil, cayenne powder, and garlic powder that are very helpful for the body. Add a little salt to the kale to make it tastier. In a few minutes in the microwave, a very nutritious snack has been created.

Ingredients:
1 bunch of kale
2 tbs coconut oil
1/2 tsp cayenne
1/2 tsp garlic powder
1/4 tsp salt

Directions:
Wash kale. Remove hard stems and use them to juice. Cut kale leaves into pieces not too large not too small.
Place cut kale leaves in a mixing bowl with the rest of the ingredients. Use your hands to coat kale with all the ingredients. You also can melt the coconut oil and let cool or use olive oil (your choice and also the spices too)
Line a microwave-safe plate with parchment paper. Arrange each piece of kale onto the dish (trying not to overlap them). Microwave about 3 to 4 minutes depending on each Microwave. Continue until all kale becomes chips. Place in an airtight container and enjoy!!

East-West Tuna Pizza

I used to work at California Pizza Kitchen, and many critics say that their pizza is not "real" pizza. However, the menu varieties are fantastic. For years working there, I really love their concept. It like East meats West. I create many recipes with these ideas and today, I like to introduce the Tuna pizza using the East meats West concept. It is the easiest pizza that anyone can create at home. let's start it.

Ingredients:
Two 8 inch pizza dough (homemade or already made).
4 oz. can tuna
Sauce ingredients:
2 tbs Thai sweet chili sauce
2 tbs garlic oil*
Filling ingredients:
2 artichoke hearts, sliced
1/4 cup red onions, sliced
1/4 cup chopped bell pepper
1 tsp caper
2 mushrooms, sliced
1 to 1/2 cup cheese (Mozzarella, goat cheese, etc., your choice)

Directions:
Combine the Thai chili sauce and garlic oil.
Brush the pizza dough with chili sauce mixture.
Divide the filling delete for each pizza.
Sprinkle some cheese on each pizza. Then spread the fillings, starting with tuna and finishing with red onions and some cheese on top .
Bake in a preheated oven set to 450° for 15 minutes to 20 minutes.
*Crush 2 garlic cloves and fry with 2 tbs peanut oil until golden brown.

HOW TO STAY YOUNG

1. Throw out non essential numbers.
This includes age, weight, and height.
Let the doctors worry about them. That is why you pay them.
2. Keep only cheerful friends.
The grouches pull you down.
(Keep this in mind if you are one of those grouches!)
3. Keep learning:
Learn more about the computer, crafts, gardening, whatever.
Never let the brain get idle.
'An idle mind is the devil's workshop.'
And the devil's name is Alzheimer's!
4. Enjoy the simple things.
5. Laugh often, long and loud. Laugh until you gasp for breath.
And if you have a friend who makes you laugh, spend lots and lots of time with him or her!
6. The tears happen
Endure, grieve, and move on.
The only person who is with us our entire life, is our self.
LIVE while you are alive.
7. Surround yourself with what you love
Whether it's family, pets, keepsakes, music, plants, hobbies, whatever.  Your home is your refuge.
8. Cherish your health:
If it is good, preserve it.
If it is unstable, improve it.
If it is beyond what you can improve, get help.
9. Don't take guilt trips.
Take a trip to the mall, even to a foreign country, but NOT to where the guilt is
10. Tell the people you love that you love them, at every opportunity
