Easy Crockpot Vegetarian Mixed Baked Beans

For vegans, beans are the fantastic source of protein and fiber and they should use a variety of beans, such as black, white, pinto, and red beans. I love baked beans, but the bacon fat and sweetness from brown sugar are not what healthy eating is all about. For that, I like to create my own healthy baked beans and hope this recipe will encourage healthy bean lovers try to make it for themselves. Especially this is the mixed beans; I think it is much easier to consume with all the healthy beans in this one recipe.

Ingredients:
1 cup mixed beans soaked for 10 hours*

2 cups water
2 tbs coconut oil
1/2 white onion, chopped
2 garlic cloves, minced
1 tbs blackstrap molasses
2 tbs honey
1 tbs brown sugar
2 tbs tomato paste
1/4 cup ketchup
Salt and pepper to taste

Directions:
 
 
Use the coconut oil to coat the inner crockpot. Add all the ingredients into the crockpot. Cover and cook slowly overnight or for  10 hours.
 

 Adjust the seasoning before serving.
* To make the mixed beans:
Mix equal amounts of beans, such as black, red, white, pinto, kidney, and black eye peas. I believe all these beans can be cooked at the same amount of time.
