Easy Oyster Omelette

I have been busy lately, but it also gave me many ideas to create a healthy meal without compromising my principled eating habit. This recipe is one of my favorite choices to whisk up a healthy meal. Oysters in a jar sell at Costco or other grocery stores are a perfect choice for this dish. Oysters and eggs are a good combination to provide enough protein to satisfy daily requirements. If you are single and living alone, this dish is for you. Enjoy!

Ingredients:
1 egg
2 tbs ground turkey
2 tbs milk
4 oysters
1 scallion, sliced
1 mushroom, chopped
1 tbs chopped water chestnut
Salt, soy sauce, and black pepper to taste
1 tsp peanut oil

Directions:
In a mixing bowl, beat egg, scallion, oysters, and milk. Season with salt, soy sauce, and pepper (about 1/4 tsp salt and 1/2 tsp soy sauce).

Heat 1 tsp oil in a wok; stir in ground turkey until brown. Add chopped mushroom and water chestnut and cook for 2 minutes.

Pour the egg mixture into the pan and cook, lifting the edges of the omelette as the egg sets so the uncooked egg can run underneath.



Cook for 2 minutes until just set.

 Turn over and cook for another 1 minute or so. Serve with rice or bread. Sprinkle with chopped cilantro.
