Corn muffins are easy and delicious to make
for a quick breakfast or an addition to a holiday dinner by adding other
ingredients, such as ham, jalapeno, green onions etc. This basic corn muffins
recipe can be made with or without the sweet corn.
Ingredients:
1/2 cup corn meal
1/2 cup all-purpose flour
1/4 cup sugar
1 egg
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/4 cup oil
1 cup frozen sweet corn (optional)
Directions:
Preheat oven to 350°.
Line an 8 medium-size muffins tin with paper
muffins liners.
In a medium bowl, combine all the
ingredients and beat well with a hand-held mixer or a whisk.
If you want to use a blender, blend all the
ingredients except the corn meal, flour, and the baking powder. Blend well and
pour this mixture into the corn meal, flour, baking powder. Add the frozen corn
last and stir well to combine.
Spoon the batter into the prepared muffin
tin liners.
Bake in the preheated oven for 20 to 25
minutes or until a toothpick inserted into the center of a muffin comes out
clean.
Serve warm.
