Low-fat Baked Salmon with-Almond Sauce

I had the idea to use almond milk in making the cream for the sauce used in many kinds of dishes. This low-fat cream will help your family to shed some pounds. It is very easy to make the sauce and to keep it in the refrigerator for weeks. This sauce will save time for busy people who want to create healthy meals. Adding cheese to the sauce will create a taste like Alfredo sauce for pasta.

Ingredients:

1-6 oz. salmon fillet

1 cup almond milk (plain unsweetened)

2 garlic cloves, minced

½ red onion, chopped

1 tbs all-purpose flour

1 tbs olive oil

Salt and pepper to taste

Topping:

Fresh chopped parsley

Directions:

To make the almond cream:

In a sauté pan, heat oil; add minced garlic and chopped onion. Then stir-fry until fragrant. Stir in the flour and cook the flour for 1 minute. Add almond milk and bring to boil. Season with salt and pepper and cook until the sauce thickens. Remove the sauce and store in a glass jar with lid.






To make the salmon dish:

In a baking dish, place the salmon. Sprinkle about 1/2 tsp salt on the salmon and pour 1/3 cup of the cream over the salmon. Bake in the oven for 10 minutes; top with fresh parsley.





Tip: if using cheese, add to the sauce while cooking.

To make almond milk at home: 

1 cup dried almonds, soaked overnight

5 cups water

In a Vitamix or blender, blend almond and water until smooth. You can add dates or vanilla to the milk. You can drain the milk or drink as is.
