Spring Rolls with Peanut Sauce

Vietnamese cuisine is renowned for its delicious spring rolls, a popular street food enjoyed by many.  Depending on the filling, this dish can be adapted for both vegetarians and non-vegetarians. Spring rolls are typically served with a dipping sauce that has a sweet and tangy taste, made from fish sauce, soy sauce, or peanut sauce.  Peanut sauce, often associated with Thai cuisine, adds a rich and nutty flavor to the dish.

Today, I am sharing a quick and easy recipe that makes use of leftover grilled chicken from Costco or Sam's Club.  After enjoying your main dishes, any remaining chicken can be repurposed to create these tasty spring rolls.

Ingredients:

Spring Rolls Ingredients:

  • 4 rice paper sheets (8 inches in diameter)
  • 1 cup shredded grilled chicken
  • 1 egg
  • Vegetables:
    • 1 cup shredded vegetables (bell peppers, carrots, cucumbers, bean sprouts, cilantro, mint)
    • 4 lettuce leaves

Peanut Sauce Ingredients:

  • 1 cup creamy peanut butter
  • 12 oz. coconut water
  • 1/4 cup hoisin sauce
  • 1/4 cup ketchup
  • 1/4 cup sriracha hot sauce
  • 2 tbsp vinegar
  • 1/4 cup brown sugar
  • 2 tbsp coconut oil
  • 1/4 tsp minced garlic clove
  • 1/2 tsp minced ginger
  • 1/4 tsp minced lemongrass

Directions:

1.    Beat the egg until well mixed, then fry until set.  Cut into thin strips.

2.    Soften each rice paper sheet in lukewarm water and lay it flat.

3.    Divide the chicken, egg strips, and vegetables into four portions.

4.    Place the vegetables closest to you, followed by the chicken and egg strips.  Roll tightly and serve with peanut dipping sauce.

Peanut Dipping Sauce Preparation:

1.    In a saucepan, heat coconut oil over medium heat.

2.    Add garlic, ginger, and lemongrass, cooking for about 1 minute until fragrant.

3.    Stir in peanut butter, followed by the remaining ingredients.

4.    Bring the mixture to a gentle boil, adjusting seasoning to taste.

5.    Remove from heat, and the sauce is ready to serve.

6.    Store any leftover sauce in a glass jar with a lid and refrigerate for future use.
