Lemon-Garlic Baked Fish

A simple lemon-garlic marinade with lots of fresh herbs and Creole seasoning used in this fish recipe makes for a quick hearty dinner. Any kind of fish can be used for this recipe. Keep this meal simple by serving with green beans, any steamed vegetables, or small potatoes.

Ingredients:
Two 7 oz fillet tilapia, cod, or haddock
2 tbs fresh lemon juice
Zest of one lemon
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1 tsp Creole seasoning
1/4 cup freshly chopped parsley
1/2 cup thinly sliced red onion

Directions:
Preheat oven to 400°. Spray nonstick baking sheet with cooking spray.
Combine the lemon juice, garlic, salt, black pepper, and Creole seasoning in a mixing bowl. Add fish and marinate for 15 minutes. Place fish onto the baking sheet. Top each fish equally with fresh herbs, lemon zest, and red onions. Drizzle each fish with one tablespoon of olive oil. Bake for 10 minutes. Remove and serve.
