looking for easy recipes regarding cooking or baking. My philosophy about
cooking or baking is to have fun and to be easy. Time is too short to spend all
day preparing a meal or dessert all day. Besides, baking requires patience, and
I have none. This is an easy apple cake that can be made in the morning. It can
be served as part of breakfast or as a dessert. It is easy as its name. All the
ingredients will be in one bowl. I use a Vitamix to blend eggs and oil because
I use this step to make this recipe much easier. Even though this cake is easy,
nevertheless the taste is so good.
Ingredients:
1 ½ cups all purpose flour
1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1/2 cup chopped walnuts
1/2 cup raisins (optional)
1 ½ cups diced apple (I use 1/2 red apple and
1/2 Granny Smith)
2 tbs soft butter
1 tbs flour
8” x 8” cake pan
Directions:
Use 1 tbs soft butter to grease and flour the
cake pan and set aside.
Preheat oven to 350°.
Place eggs and oil in a Vitamix or any
blender that you have. Blend a few times.
Combine the rest of the ingredients in a
medium bowl.
Pour the egg and oil mixture into the bowl
with all the other ingredients.
Mix well with a spatula or a whisk.
Pour into the prepared cake pan.
Dot with the remainder of the soft butter.
Bake in the oven for 30 to 35 minutes or until a
toothpick inserted into the center comes out clean.
Let it cool before cutting and serving.
