Stir-Fried Tuna with Spaghetti Squash and Bell Peppers

Currently, fewer people prepare meals at home. Many meal products are ready-made and are quite good and convince us that we are busy and do not have time. However, a healthy meal can be achieved with very little effort because all we have to do is by changing our way of cooking. Most healthy recipes are simple for people who have very little skill in the kitchen. Also, make cooking at home fun by spending time with loved ones or simply imagine the smiles on their faces when serving them a hot healthy meal instead of from store-bought red boxes or green boxes. The ingredients in some of the recipes are interchangeable, so experiment to suit your personal taste .We can take pleasure by making real food and taking time to enjoy our meals with family. It is quite a simple choice.

Ingredients:
Two 6 oz. tuna fillets, cut into 1 inch cubes
Stir-fry sauce ingredients:
1 tbs soy sauce
1 tbs rice vinegar
1 tbs lime juice
1 tsp miso paste
1 tbs blackstrap molasses
2 garlic cloves, minced
1 tsp fresh ginger, chopped
1/8 tsp cayenne pepper
Vegetables:
2 cups spaghetti squash
2 cups combination of red, green, and yellow bell peppers, julienned
2 button mushroom, sliced

Green onions and cilantro for garnish



Directions:
In a mixing bowl, combine the stir-fry sauce ingredients and stir well.

Add about 2 tbs of the stir-fry sauce to marinate the fish for one hour.
Have all the vegetables ready to cook.
Heat a wok or large skillet over medium heat and add 2 tbs of vegetable oil or your choice of cooking oil.  Fry the fish until crisp.

 Add mushrooms. Stir for 2 minutes and add the rest of the vegetables and sauce.


 
Quickly toss the vegetables and fish together to coat with sauce. Sprinkle with green onions and cilantro to serve.

To make it a completely healthy meal, serve with cooked wild rice (red, brown and black) with cilantro. To make spaghetti from spaghetti squash, look up in the internet or see my recipe posted on the December 18, 2015.
