Turkey Meatballs with Spaghetti Squash

I have posted a few turkey meatballs recipes, and today I am introducing another easy meatballs recipe using turkey meat, which is considered lean protein. Many existing recipes to make meatballs use either ground beef, chicken, or turkey. The key ingredients are onions, garlic, breadcrumbs, and cheese. If you are a fan of my blog, then you already know that my family hardly consumes cheese in our daily diet. It does not mean that we miss out on things in life. Most of the recipes that I share in my blog are improvised to meet the healthy diet requirements that are needed in my family. The Easterner's diet contains more clean protein and lot of vegetables. The recipes depend heavily on spices which improve health.  I love the Moroccan taste and the spices that are used in this cooking is available in my kitchen. I will show how to make the Moroccan spices blend, and this spices blend will be kept in the pantry to make other dishes. The mini turkey meatballs are very easily put together. If sufficient time is not available, then store-bought spaghetti or tomato sauce is good to add to the meatballs at the final stage.

Ingredients:
Moroccan spices blend ingredients:
1 tsp ground cumin
1 tsp ground ginger
1 tsp ground turmeric
1 tsp ground coriander
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground cinnamon
1/2 tsp cayenne
1/2 tsp ground allspice
1/4 tsp ground clove
1/4 tsp ground nutmeg
 Mix well in a jar with a lid and store in a cool place
Meatball ingredients:
1 lb. ground turkey
1 cup onions, finely diced
2 tsp Moroccan spices blend
1 tsp salt
1/2 cup chopped cilantro
1/2 cup breadcrumbs or panko
1 tsp sugar
1 garlic minced
1/2 tsp fresh ginger, chopped
1 egg
Easy tomato sauce ingredients:
One 15 oz.can stewed tomatoes
1 cup chopped onions
2 garlic cloves, minced
2 tbs tomato paste
1/4 cup oil
1 cup red wine
1 cup chicken broth
1/2 cup chopped parsley

Directions:
In the mixing bowl, combine all the meatball ingredients and mix well. Wash your hands and then oil them. Then shape the meatball ingredients into 1 to 1 ½ inch diameter balls.and set aside.







Heat 2 tbs of olive oil in a sauté pan and begin cooking the turkey meatballs until golden brown and set aside.


Add the rest of the oil to the pan. Stir in onions and garlic and cook until fragrant. Add tomato paste, stir, and add the red wine. Cook a few minutes





. Add the stewed tomatoes and parsley.

Adjust the seasoning with salt and sugar. Add broth and bring to boil and simmer for 15 minutes. Use the immersion blender to blend the sauce. Nestle the turkey meatballs into the sauce and simmer for 20 minutes.
