Easy Ginger Baked Chicken


I always feel relaxed on Sunday. For that reason, the easiest way to relax is not thinking too much about “What’s for dinner?".  For so many moms out there, this question is often asked.  However, the easy answer is using some of the good tasting marinades on the market and adding some of the ingredients that are available in the kitchen.  I have used this shortcut many times, and it is wonderful.  I will share this simple recipe for Sunday dinner.

Ingredients:
2 boneless, skinless, chicken breasts

Marinade ingredients:
1/4 cup ginger dressing

1 tsp miso
1 tsp honey
1 tsp fresh minced ginger
Black pepper
1 tbs peanut oil (I use hot chilli oil)
Other ingredients:
Chopped green onions and cilantro for garnish

Directions:
Slice chicken into long, thin pieces with about 2 inches wide.

Combine all the marinade ingredients and mix well.
Pour the marinade mixture over chicken and marinate for a few hours.

Arrange the chicken pieces on a baking dish and bake in oven set to 350° for about 20 to 30 minutes.  The baking time varies depending on each oven.


You also can grill the chicken on a stovetop.
Sprinkle with cilantro and green onions and then serve.
