Quick Stir-Fried Ramen Noodles with Chinese Sausage

If Chinese takeout stir-fried egg noodles dish is one of your favorites, then the Ramen stir-fried noodles dish is a good substitute.  I even like to make this dish more often at home because it is quick and healthier with all the ingredients that I like to add into this dish. I remember, in college, we ate instant Ramen noodles all the time and loved it. However, I will share this recipe for young college kids who like to eat healthy food for their brains. I know Chinese sausage may be is not a good choice to consume regularly, but, it tastes good especially with this dish. Most college age students are young, and they can walk and study hard to get rid of a few extra pounds that they put on. Let's get cooking!

Ingredients:
1 bag of Ramen noodles

1 Chinese sausage
1 egg
Oil for stir-frying
Stir-fried sauce ingredients:
1 tsp oyster sauce
1 tsp soy sauce
1 tsp sugar
1 tsp apple cider vinegar
2 tbs water
Vegetables:
1/4 cup white onion, sliced
1 garlic clove minced
1 cup total of julienned red, yellow, and green bell peppers
A handful of bean sprouts
A couple of mushrooms, sliced

Directions:
Cook the Ramen noodles following the directions on the package (do not overcook the noodles), and then drain.





Slice the Chinese sausage and set aside.


Combine the stir-fried sauce ingredients and set aside.
Heat a few drops of oil in a sauté pan.  Add the Chinese sausage and fry them (because the Chinese sausage has a lot of fat, it does not need a lot of oil to fry). 

When the cooked sausage just releases some fat, move the sausage off to the side.  If you do not have a large pan, remove the sausage.

Add a little more oil onto the pan.  Add onions and garlic.  Stir for a few seconds, or until you can smell the fragrance of garlic. Add the bell peppers and mushrooms. Stir for 1 minute.

  Add sausage and Ramen noodles back with the vegetables. Add stir-fried sauce and make a quick stir to combine.

 Add bean sprouts.

 Adjust the seasoning at this point to your liking.  Sprinkle with green onions and cilantro. Place noodles on a serving plate and enjoy.


I like to make Sunny Side up or over easy eggs to serve with this dish, but it is totally optional. Use the same pan, and clean the pan with a paper towel.  Add only a little oil (1/2 tsp oil) and crack open an egg. It adds more protein to this dish.
