The Vietnamese cuisine is quite diverse; each dish has a unique
flavor. Today, I will share a recipe with frequent visitors to my blog who
can come together with this delicious dish that is very tasty and is easy to
prepare.
With just a few quick
steps, a delicious baby ribs stew is ready on the table. Besides the sweet
and salty taste of this dish, it is a combination of other ingredients, such as
hot chilli pepper and a lot of black pepper. It will be attractive and
interesting. Also, a great thing is that every day I try to introduce a
new way to create a delicious meal that is not too sophisticated or
complicated. Personal joy always starts with simple things, such as a simple
meal with family or friends, and the bonus result is that everyone else
will be very happy too.
Ingredients:
1 ½ to 2 lbs of short ribs
2 tbs oil
Marinade ingredients:
1 tbs fish sauce
1 tbs soy sauce
1 tsp combination spice
2 fresh hot chilies
Spice ingredients:
2 shallots
2 garlic cloves
2 chopped lemongrass
2 fresh Thai hot chilies
Stew sauce ingredients:
1/2 cup chicken broth
2 tsp sugar
1 tbs honey
1 tsp blackstrap molasses
1 tbs soy sauce
1/2 tsp salt
1/2 tsp black pepper
Other items:
2 green onions, cut into 1 inch
lengths
Serve with hot cooked rice
Garnish with chopped cilantro
Directions:
Combine the spice ingredients
in a mini food processor and blend well.
Wash the baby ribs and cut into
bite-size pieces. Soak the cut ribs in salt and vinegar water for a few
hours.
After a few hours, drain the ribs and dry them with paper towels.

Place ribs in a container and
add the marinade ingredients and half of the spice. Mix well, and refrigerate until ready to cook (at
least 3 hours or overnight).
Heat oil in a wok or deep sauté
pan. Add ribs and brown the ribs.
Add the rest of the spices (stir and cook until fragrant). Do not burn the spices.

Add stew sauce ingredients to
the wok (simmer and cover the wok). Cook for 30 minutes or until ribs are
tender. Stir occasionally and adjust the seasoning as you go with more sugar or
fish sauce.
Uncover the wok in the last 10
minutes of cooking time so the sauce will be absorbed more by the ribs.
Serve with rice and sprinkle
with chopped cilantro.
