I am very satisfied with this recipe and happy to share it with
all my frequent blog visitors. There are few better sources of nutrition to provide
to our bodies than salmon and eggplant. This recipe creates one of my quick and
easy healthy dishes that can be brought to the table.
Ingredients:
1 Japanese eggplant
One 6 oz. salmon fillet
Stir-fry sauce ingredients:
1 tbs soy sauce
1 tbs fish sauce
2 tbs miso paste
1 tsp Korean chilli paste
1 tbs lemon juice or vinegar
1 tsp honey
1/2 cup water
Others:
2 garlic cloves, minced
1/2 cup sliced white onion
2 tbs peanut oil
Garnish with chopped cilantro
Directions:
Cut salmon into big chunks.
Combine the sauce ingredients
in a bowl and stir well.
Move eggplant to the side with
the minced garlic and onion slices. Stir until fragrant;
then add salmon; Add a little more oil, if needed. Cook salmon for 1 minute on each side and add sauce.

Make a quick stir and bring it
to boil. Cook until sauce is absorbed. Adjust the seasoning with more soy sauce
or fish sauce.
