2.    Stir in the chili powder or annatto oil, allowing the spices to infuse.

3.    Add the remaining ingredients, mixing thoroughly.  Bring to a gentle boil, then turn off the heat.

4.    Taste and adjust seasoning to suit your preference.

5.    Let the sauce cool completely, transfer it to a lidded jar, and refrigerate for future use.
