Chicken & Cheese Quesadillas

Chicken and cheese quesadillas are one of the quickest-fix meals ever. Just corn or flour tortilla filled with anything left over in the refrigerator from sweet to savory. This is another alternative from Mexico for the grilled cheese sandwich. A few ingredients, such as cheese, green onion, mushrooms or cooked chicken, will take this recipe to the top. Use your imaginations and have fun.
Ingredients:
Four 10-in. tortillas
1 cup cheese (any kind)
1/2 cup mushrooms thinly sliced*(optional)
1 cup cooked chicken
1/2 cup sliced tomatoes
1/2 cup red onions thinly sliced
1/2 cup sliced green onions
2 tbs butter
2 tbs oil
Directions:
Divide the ingredients equally into four portions. Set aside

In a cast iron pan with a little butter and oil over medium heat, place one tortilla and flip over a few times to warm it up.

 Spread cheese, chickens,mushrooms, red onions , tomatoes and green onions.

Reduce the heat and cover the pan for a few minutes. Uncover and fold quesadillas into a half moon shape.


Flip again as if making an omelet. Quesadillas should be browned on both sides and with the cheese melted. Remove from pan and cut into wedges. Serve with sour cream



*Mushrooms can be cooked slightly
