Quick Sticky Rice with Chicken

There are many ways to prepare this dish. The recipe below is so simple. The roasted chicken form leftovers changes the taste from Western to Asian with a few ingredients.
Ingredients:
2 cups sticky rice soaked overnight, drained
2 cups shredded roasted chicken
1 clove garlic, minced
1 shallot, minced
2 green onions
1 tbs soy sauce
1/4 tsp salt
1/4 tsp black pepper

Garnish:
Fried shallots*
2 tbs canola oil

Directions:
Place rice into steamer and cook over medium heat for 20 minutes or until rice is done.
In a small pan, add oil, garlic, and shallot. Saute' for a few minutes or until fragrant. Add chicken, soy sauce, salt and black pepper. Cook for a few minutes. Throw in the green onions at the last minute.
Serving the rice:
Divide portions of rice equally onto plates. Top with chicken mixture and sprinkle with fried shallots.


*Thinly-sliced shallots fried in hot oil until crispy
