Anchovies-Peanuts Side Dish

People who travel to Taiwan, Korea, or Vietnam will be familiar with this side dish. The dried anchovies cooked with peanuts create a common dish of Asian cuisines. This dish is served with steamed white rice or as a side dish when served with hot pot soup or grilled BBQ pork or beef. Asian men love to eat this dish while drinking beer. Eating anchovies is a very good way to add more calcium and iron into the diet, especially for women.
Ingredients:
1 cup dried anchovies, soaked in water for 10 minutes
1 cup cooked peanuts
3 green onions, green part only, cut into 1 inch lengths
1 jalapeno, chopped
2 cloves garlic, chopped
1 shallot, sliced
1 tsp chili powder
2 tbs peanut oil or vegetable oil
Cooking liquid
2 tbs soy sauce
1/4 tsp salt
1 tbs honey
1 tbs brown sugar

Directions:
In a medium pot, heat peanut oil over medium high heat. When oil is hot, add shallot, garlic, and jalapeno.

Stir and cook until fragrant (about 3 minutes). Add anchovies, peanuts, and chili powder.


 Cook and stir for 5 minutes or until anchovies look dry. Move anchovies on the side of the pot and add the cooking liquid. Let the cooking liquid start sizzling and caramelizing for a few seconds.

Move the anchovies-peanuts mixture to coat the liquid well. Turn the heat down and cook for 5 more minutes. Add green onions.

Mix well and turn the heat off.
