Avocado Coconut Muffins

I recently bought the most wonderful tool in my kitchen, a Vitamix CIA Professional model. It is true that this machine does more than just smoothies or dips. I have gone through their recipe booklet, and avocado bread is one of the bread recipes in the booklet. Instead of all the ingredients for avocado bread, I made some changes and created my own avocado coconut muffins.

Ingredients:
1 cup cake mix
1/4 cup sugar
1/2 avocado. peeled
1 egg
2 tbs butter softened at room temperature
2 tbs chia seeds gel (1 tsp dried chia seeds with 1/4 cup water)
2 tbs coconut oil or vegetable oil
2 tbs nonfat yogurt
1 tsp vanilla
1 tsp ground cinnamon
1/4 tsp nutmeg (optional)
1/4 cup sweet coconut flakes

Directions:
Preheat oven to 350°. Line the muffin tin with paper liner cups (recipe will make about 7 small size muffins)
Combine cake mix, cinnamon, nutmeg and sugar in a medium mixing bowl. Set aside.

In the Vitamix container, put egg, coconut oil, chia seeds gel, butter, and sour cream.

Select the variable 1 speed. Turn the machine on and quickly increase speed to Variable 10. Then turn high. Blend for 30 seconds. Reduce the speed to variable 2 and remove the lid plug. Add avocado in through the lid plug opening. Replace the lid plug and increase the speed to variable 4 and blend for 10 seconds.
Mix the wet mixture with the dry mixture and fold until evenly incorporated.

Spoon the batter into the prepared muffin tins. Sprinkle with coconut flakes on top of each muffin.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
