Japanese Marinade

This is an East meets West simple marinade for many vegetarian meals and seafood recipes. I always prepare this sauce and keep it handy. Toss it as a dressing with salad ingredients or use it to marinate tofu or fish for a complete healthy meal.

Ingredients:
1/2 cup soy sauce
1/2 cup mirin (sweet Korean or Japanese wine)
2 tbs sesame oil
2 tsp honey
2 tsp fresh ginger, minced
1 clove garlic, minced
1 tsp wasabi paste
1/4 cup lime juice
2 tbs roasted sesame seeds

Directions:
Combine all the ingredients except the roasted sesame seeds in a jar. Cover and shake well. Refrigerate until ready to use.
Add the roasted sesame seeds before using each recipe. Follow this simple recipe for
baked salmon

Ingredients:
Two 6 oz salmon fillets
3 green onions, cut into 3 inch lengths
1/4 cup Japanese marinade
3 tbs olive oil
1 tsp chili flakes
Salt and pepper
1 tbs roasted sesame seeds
Chopped fresh cilantro leaves

Directions:
Place fish onto the baking dish. Pour the marinade over the fish. Top with green onions. Let fish marinate for 20 minutes. Preheat oven to 400° and bake fish for 20 minutes. Sprinkle with chopped cilantro and roasted sesame seeds.
