Tandoori Chicken

This Indian dish is a most satisfying treat for dinner prepared in under 40 minutes. The yogurt and other spices marinade, which tenderize the chicken, bring out the best of this Indian meal. Serve with naan bread as a sandwich or cooked rice.

Ingredients:
1/2 lb. chicken breasts, cut into 3 inch long pieces
1/2 cup red or white onions, sliced
1 beefsteak tomato, sliced
Marinade sauce:
1/4 cup nonfat yogurt
1 tsp minced fresh ginger
1 clove garlic, minced
1/4 tsp cumin
1/4 tsp turmeric
1/4 tsp cayenne
1/2 tsp salt
1/4 tsp black pepper
1tbs honey
2 tbs fresh chopped cilantro leaves
2 tbs coconut oil

Directions:
Wash and pat dry the chicken and place in a container with lid.
Whisk together yogurt, all the spices, cilantro leaves and coconut oil in a bowl. Pour this mixture into the container with the chicken and mix well. Cover with lid. Let marinate 20 to 30 minutes.
Preheat broiler. Place chicken onto a baking dish (do not overlap the chicken). Broil until cooked through (about 10 to 20 minutes). Meanwhile, in a small sauté pan, add 1 tbs oil and fry tomato and red onions until charred. Serve with broiled chicken.
