Apricot Cookies

Sometimes I have to make a batch of cookies for a sudden visit from friends or neighbors. I like to make apricot cookies. It is easy because most kitchens always carry these ingredients. Feel free to double or triple the quantity of ingredients to make more cookies for later enjoyment.

Ingredients: (makes 2 dozen cookies)
1 cup all-purpose flour
1/2 tsp baking soda
1 tsp vanilla
1/4 cup brown sugar
1/4 cup white sugar
1/4 tsp salt
1/2 cup soft butter or vegetable shortening
1 cup dried apricots, chopped
1 egg

Directions:
Preheat oven to 350°.
Combine shortening and sugars in medium bowl.

 With a handheld electric mixer, beat until well blended.
 

 Beat in egg and vanilla until well blended

Combine flour, salt, and baking soda in a medium bowl. Add flour mixture into the sugar mixture.

Mix well. Stir in chopped apricots.
 
 

 Drop tablespoonfuls of dough onto ungreased cookie sheets (about 2 inches apart).


Bake for 10 to 12 minutes or until edges are lightly browned. Let cool on the cookie sheet for a few minutes.


 Using a cookie flipper, transfer cookies to a cookie rack.
