Salmon Stir-fry with Mushrooms and Bell Pepper.

Here's a simple salmon recipe stir-fry with mushrooms and bell pepper:

Ingredients:

2 salmon fillets, skin removed, cut into cubes

1 cup sliced mushrooms (any variety you prefer)

1 cup combination of peppers, sliced

2 garlic cloves, minced

1 cup red onions, diced

Stir-fry sauce ingredients

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tsp sriracha sauce

1 tbsp honey 

1 tsp vinegar

Salt and pepper to taste

Oil for stir-frying

Optional: sliced green onions or sesame seeds for garnish

Directions:

Place cubed salmon in a bowl and start by seasoning the salmon with salt and pepper.

Heat the olive oil in a large skillet over medium-high heat.

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.

Add salmon to the skillet and cook for 5 minutes or until cooked through. Remove the salmon from the skillet and set aside.

In the same skillet, add the sliced mushrooms and bell pepper. Cook for 5-7 minutes, stirring occasionally, until they are tender.

Once the vegetables are cooked, return the salmon to the skillet.

Combine all the stir-fry sauce ingredients in a bowl and mix well.

Pour the sauce over the salmon and vegetables, and toss everything together gently.

Cook for an additional 1-2 minutes until everything is heated through.

Serve the salmon stir-fry hot, garnished with sliced green onions or sesame seeds, if desired.
