Walnut and Dates Soup

Ingredients:

1/2 cup walnuts

1 cup of red seeded dates

2 cups water

1 cup coconut milk

1/4 cup honey

1 tsp vanilla

Thickening ingredients:

2 tbsp cornstarch

2 tbsp water

Directions:

Soak dates in 2 cups of warm water to soften.  Add dates, walnuts, and the soaked water in the blender and blend until smooth.

Add the blended dates and walnuts to the pot and bring to a boil. Cook for 10 minutes, mix in the thickening, and cook for 5 more minutes. Add the honey and vanilla. Adjust the sweetness to your liking.
