Easy Flaxseed Cookies Recipe

These simple and easy flaxseed cookies are a great healthy snack. You can substitute coconut oil for butter to make them even healthier. Adding cereal gives these cookies a delightful crunch.

Ingredients:

  • 1 cup self-rising flour
  • 1/4 cup flaxseed powder
  • 1/4 cup raisins
  • 1/2 cup sugar
  • 1/4 cup crushed flake cereal
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon powder

Directions:

1.    Preheating the Oven: Preheat your oven to 350°F (175°C).

2.    Mixing the Dry Ingredients: In a large bowl, combine the self-rising flour, flaxseed powder, sugar, cinnamon powder, and crushed flake cereal.

3.    Adding the Wet Ingredients: Beat the egg, coconut oil and sugar in a separate bowl. Add the beaten egg and vanilla extract to the dry ingredients. Mix well until combined.

4.    Incorporating the Raisins: Fold in the raisins into the mixture.

5.    Forming the Cookies: Scoop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper. Flatten them slightly with a spoon or your hand.

6.    Baking: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

7.    Cooling: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
