These simple and easy flaxseed cookies are a
great healthy snack. You can substitute coconut oil for butter to make them
even healthier. Adding cereal gives these cookies a delightful crunch.
Ingredients:
- 1 cup self-rising flour
- 1/4 cup flaxseed powder
- 1/4 cup raisins
- 1/2 cup sugar
- 1/4 cup crushed flake cereal
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon powder
Directions:

Preheating the Oven: Preheat
your oven to 350°F (175°C).

Mixing the Dry Ingredients: In a large
bowl, combine the self-rising flour, flaxseed powder, sugar, cinnamon powder,
and crushed flake cereal.

Adding the Wet Ingredients: Beat the
egg, coconut oil and sugar in a separate bowl. Add the beaten egg and
vanilla extract to the dry ingredients. Mix well until combined.

Incorporating the Raisins: Fold in the
raisins into the mixture.

Forming the Cookies: Scoop
spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
Flatten them slightly with a spoon or your hand.

the cookies cool on the baking sheet for a few minutes before transferring
