Ingredients:

  • For the Shrimp Toast:
    • 1/2 lb shrimp, shelled and cleaned

    • 1 scallion, chopped
    • 1 garlic clove, minced
    • 1 small piece of ginger, minced
    • 1/2 tsp salt
    • 1/8 tsp white pepper
    • 1/4 tsp sugar
    • 1/4 tsp chicken powder
    • 1/2 tsp sesame oil
    • 2 tbsp cornstarch
    • 1/4 cup sesame seeds
    • 6 slices white bread
  • For the Dipping Sauce:
    • 2 tbsp sugar
    • 6 tbsp ketchup
    • 3 tbsp white vinegar
    • 3 tbsp water
    • 1/4 tsp salt

 

Directions:

1.    Preparing the Shrimp Paste:

·         Add the shrimp to a small food processor and blend into a paste.

·         In a bowl, combine the shrimp paste with shredded carrots, chopped scallion, minced garlic, minced ginger, salt, white pepper, sugar, chicken powder, sesame oil, and cornstarch. Mix well.

·         Refrigerate the mixture for 20 minutes.

2.    Assembling the Toast:
