Sweet Rice with Mangoes

If you are familiar with Thai food, sweet rice with mango is a favorite Thai dessert. The firm texture of the sweet rice paired with slices of ripened mango with coconut cream is an irresistible taste experience. Fortunately, this is very simple to make at home, and the recipe below is definitely worth keeping.

Ingredients:
2 cups sticky rice, soaked overnight in water
2 ripened mangoes

Sauce:
1/2 cup to 1 cup of coconut cream
1/4 cup to 1/2 cup sugar (depending on your sweet desire)
pinch of salt

1 teaspoon roasted sesame seed (optional)

Directions:
Drain the rice and place in an even layer in a steamer lined with cheesecloth so the rice does not fall through the holes.
Steam the rice on high heat for 15 to 20 minutes.
While the rice is cooking, combine the sauce ingredients in a big bowl with lid and stir well to dissolve the sugar.

Put the cooked rice into the bowl and mix in the sauce while the rice is still hot. Cover and set aside.

Peel the mangoes carefully so as not to bruise the fruit, cut the mangoes in half as close to the seed as possible and slice each half into 1/2 inch-wide pieces.
Arrange the cooked sticky rice on the plate and top with sliced mangoes. Sprinkle with sesame seeds.

*if you want it to taste like soft-silky rice pudding, you can cook the sauce and the steamed sweet rice in the sauce pan until the liquid evaporates (for this method, you need 1 cup of coconut milk).
