Baked Fish with Mustard & Tarragon

Tarragon is an herb widely used in French cooking. Since I have grown this herb in my herbs garden, I love it. It is easy to grow and comes back year after year. For a quick delicious meal this recipe provides that. The mustard & tarragon dressing can be used to dress up a salad. Make a large jar of this dressing and then refrigerate, which will become very handy later.

Ingredients:
2 tuna fillets or any kind of fish fillets
Mustard & tarragon marinade ingredients:
1/4 cup red wine vinegar
1 tbs Dijon mustard
2 tsp honey
1 tbs fresh chopped tarragon & 1 tsp dried tarragon
2 tbs olive oil
Vegetables:
1/4 cup sliced red onion
2 button mushrooms, sliced
1/2 cup green beans
1/2 tsp salt
1/4 tsp black pepper

Directions:
Place all the marinade ingredients in a jar with lid. Close the lid tightly and shake well.
Place fish in a baking dish.

Top with the vegetables and pour marinate on top. Season with salt and pepper. Add chili flakes, if you want a spicy taste.
 


Marinate the fish and vegetables for one hour. Bake in preheated oven set to 375° for 20 minutes or until the fish flakes easily with a fork. Serve.
